I always use my ripe bananas for a banana bread. Goes down very well in this house! I use my breadmaker though.
Butter 2 tbsp
Milk 1 tbsp
Mashed banana 1 cup (3 medium bananas)
1 egg
Plain flour 1 and a half cups
Bicarb of soda half a tsp
Baking powder quarter of a tsp
Sugar half a cup
salt quarter of a tsp
Don't know if that's any help!
I'd definately do it in a loaf tin.Good Enough Club member number 20 -

Longest it's ever lasted with me was about 4/5 days. Keeps longer without the whole banana, as that tends to start going a bit gooey.0
