    I cheated with this and bought tin liners when they are on offer in Julian Graves. Come shaped for round tin and loaf tin, saves me cutting the paper which I always do badly.

    I will try that recipe for banana loaf, some soggy bananas here too :)
    One day I might be more organised...........:confused:

    I made catznine's recipe for banan bread but did it as muffins and they were fab!!! Thanks Cat!

    I have never made muffins before so had to guess a bit at how full to fill the muffin cases etc. I half filled the muffin cases and the recipe made 12. I baked in a fan oven at 160C for 17 minutes (well I set the timer for 20 but they were looking very "golden" !!)

    I dont thinkt we will need to freeze or store them in an airtight tin somehow judging by the waqy hubby is getting through them. Great way to use up manky bananas !!

    Banana Ice Cream

    2 Eggs, beaten until fluffy, 2/3 cup of sugar added a tbsp at time whilst beating, then add 2 cups of cream (double) and 1 cup of milk. Churn in ice cream maker for 20 - 30 mins. Then add 2 mashed bananas (have to be really ripe). It helps if you have a kitchen aid and a kitchen aid ice cream attachment, otherwise you might want to halve the recipe for uk ice cream makers. Alternatively you could try the freeze, whip, freeze, whip method.

    OK Strepsy, this is for you :D

    They are delicious even in my version of the recipe. Not only did I mess up the quantities, I also added the butter to the eggs/honey/milk :doh:

    Anyway, the official version (paraphrased) is:

    Ingredients:
    250g self raising flour
    25g soft brown sugar (I used light brown - dark would taste richer)
    2 tbsps clear honey (Lidl Wildblumenhonig - :drool: )
    5 tbsps milk
    2 eggs
    50g melted butter
    2 large very ripe bananas (mine were defrosted from frozen)

    Place the flour, sugar, bananas and butter in a bowl and mash together.
    Whisk the eggs, honey and milk together then beat this mixture into the rest.
    Divide into muffin cases/muffin tin and bake at 200C/400F/Gas 6 for 15 minutes.

    I tried this last night and it is soooo yummy and very very easy to make so i had to share it!!!! :j :j :j

    You need:

    4 Bananas,
    Juice of 1 lemon,
    2 oz Butter,
    3 oz Brown Sugar,
    2 tbsp Golden Syrup

    Chop up the bananas and add the lemon juice pop them in the slow cooker. In a saucepan add all the other ingredients and stir till the butter has melted and the sugar has dissolved then add these to the bananas in the slow cooker.

    Cook on low for 1hr - 1 1/2hr and thats it very yummy, goes great with ice cream or cream!!! And kids love it.

    NB: i think you could do this on the hob as well maybe add the bananas after you've melted the butter etc and simmer on a very gentle heat till the bananas are soft, if you don't have a SC.

    You can also do it in the oven. Slice the bananas onto some tin foil, add you other ingredients (i dont bother melting them first, they will do it in the oven) wrap up, so the foil is secure and then pop in the oven for about 20 minutes. Comes out lovely, but be careful when un wrapping the foil, it will be very hot!!!

  • hi just a quick question - i have a lot of very ripe bananas and thought about making a cake - i looked in the recipe index and found some for banana loaf but wasn't sure if there was a difference between a cake and a loaf?!! :confused: i do have cake tins and a new loaf tin but not sure what to do?? i also have 3 eggs, lots of flour, sultanas, dates and other basics

    any ideas?? thanks
