    Glad you had a nice birthday LC.
    I'm trying to keep to my budget this week, have booked 2 tickets to the theatre for free for Friday night :) but just about to go out for coffee with a friend, going to get him to do a finance spreadsheet so maybe he can buy my hot chocolate for me... ooh plan.

    Hehe, it's this recipe from Come Dine with Me - but be warned, it's VERY unhealthy! But also very rich, so you don't need loads. You can make it quite economically, e.g. for the berries, we buy the cheapo brand of frozen mixed red berries in Tesco.


    • 225g white chocolate
    • 150ml double cream
    • 225g soft cheese
    • 150ml coconut milk
    • 100g block creamed coconut, grated
    • Zest of 2 large oranges
    • 350g of mixed berries - raspberries, blackberries, strawberries and blueberries
    • 125g caster sugar
    METHOD

    How to make zesty white chocolate and coconut terrine laced with mixed berry compote

    1. Lightly oil a 450ml (1lb) loaf tin and line with cling film. Melt the chocolate in a bowl set over a pan of just simmering water, being careful the water doesn't touch the bowl or chocolate. Once melted set aside to cool.

    2. Meanwhile beat together the cream, soft cheese and coconut milk until light and fluffy. Add the orange zest, grated coconut and 50g of the sugar and mix well.

    3. Fold the cream mixture into the cooled chocolate and pour into the prepared tin. Smooth the surface of the mixture and freeze for 4-6 hours.

    4. To make the compote, place the berries in a saucepan with the remaining sugar and heat gently until the sugar dissolves and the berry juices start to run.

    5. To remove the terrine, dip the tin briefly in hot water to release then peel back the cling film and cut into 2.5cm thick slices. Serve with a sprig of mint and the mixed berry compote.

  • Hi! I know I'm a bit late for this week, but I need a kick up the *** this year! I waste too much money and as I am a poor student hoping to move out once I qualify this summer, I need all the spare cash I can get my paws on!
    So I hope you don't mind if I tag along for the rest of this week??!
    I haven't spent anything this week.... so far but I am going out at the weekend so I would like to try to not go over £25 for the rest of this week!

  • £20 for me this week please LC... and a massive thanks for keeping us on track,

    Sunday- Hubbys birthday, hoping for a lazy day in the house with family(he is out tonight with the boys) so will probably be nursing a hangover from hell tomorrow so I may get my NSD ;)

    Monday- working 8.00am til 12 midnight so defo a NSD :T

    Tuesday- Day off nothing planned apart from school run, and some decluttering which we are finally getting to the end of hopefully a NSD...was a NSD:T:T

    Wednesday- HOPEFULLY BOOTS SALE:D lol dont really need anything but its my guilty pleasure, do have vouchers n points on my cards tho for spends... slimming world in the night :eek:..... HAD A FAB FEW BARGAINS IN BOOTS TODAY FILLED MY PREZZIE CUPBOARD UP GOT SOME LOVELY MAKE UP BRUSHES N a nice curry set for hubby.. went to slimming world had a gain but was expected this week as have been crap:mad: spent vouchers and £20 but this was all expected and budgeted for elsewhere so a big fat zero out of challenge spent so far !!!:T

    Thursday-working 4-12 tonight so a nice lazy day pottering round house and a NSD.... not working tomorrow now as swapped shifts around in work so hoping for a NSD

    Friday- 8-4pm today may pop to town with son for a wander after work-- now working 8am-8pm every friday and having thursday off so no wander around town so possibly a NSD apart from tesco delivery.... this is in grocery challenge tho...

    Saturday- apart from work nothing planned...

    Ive started doing park hampers for close friends and family and with just 10 customers ordering shopping vouchers ive earner £208 commision(if noone drops out)amazing amout to be earned for doing so little upto 25% commision on food hampers n drink hampers etc, can see why they charge so much but its 4% on voucher sales, could be worth a look if a few of you want to save for xmas...

    Sunday: out for lunch - hoping hubby will pay - He did pay.
    Mon: work, then food shopping (seperate budget) - NSD - Food shopping £49 but NS out of my weekly budget.
    Tues: work - NSD
    Weds: work then out for an evening spa, courtesy of work. so should be a NSD - reporting a NSD, didn't treat myself as had quite enough food and drink included. :j
    Thurs: work - NSD
    Fri: - work - NSD

    Still on track, although have just realised i will probably be buying the Saturday paper. Not happy.:mad:
    Will not be starting the next weekly challenge with my £10.
