I've been given an organically-grown butternut squash. I have a recipe for soup, but that is boring. Anyone got anything else I can do with it? There's only me so a few ideas would be welcome as it is rather large.

Roast it along with some other winter vegetables carrots, potatos, leaks and it tastes lovely. Cut it into cubes or small pieces, a bit of olive oil (or whichever you use for roasting), bung all the veg in together on a baking tray, thats what I always do with ours.0

Just cut in in 1/2 length ways no need to peel. scoop out the seeds rub flesh with butter wrap in foil and bake in the oven. I would then just put rock salt and black pepper on and eat it out of the skin... beautiful.. no peeling.. no washing up.. perfect.0

I cook mine the same way as Girlpower but then scoop out the flesh and mash it with black pepper and a dollop of creme fraiche, or natural fromage frais,or even butter if you're bad
