    Hi I would use a wooden spoon or squish it together with your hands as it gets really stiff and you may break your whisk x

    Thanks for that. I have loads of desiccated coconut that needs to be used up, I think I'll give this a go. Do you use a mixer or a wooden spoon?

    I made Christmas Rockie Road, Christmas Chocolate Cookies and White Choc and Cranberry Cookies last week for a local Christmas Fair that the Brownies were having. Everything went well, so I'm planning on doing another batch for my volunteers. Also Christmas Panforte and possibly Christmas Biscotti. I love the smell of Christmas baking :D

    Pollyskettle - the Christmas biscotti is gorgeous - I made some to test and the other half is in the freezer waiting for its second baking. Really tasty. I've done blackberry and Chambord jam)


    Do you have a recipe for this, I have got some chambord for my hubby for his birthday to do champaign cocktails but know the rest will get left :)

    I am trying to get organised, tried a gingerbread recipe yesterday and was nice but I had a lo take a major tamturm and burnt my lot lol

    Made some baileys fudge from someones blog from here and thought it had failed as was still a bit sof but has firmed up in fridge and looks lovely, made some more for the kids this morning but its not looking good, could not get the temp up without it overflowing the pan :(

    Anyone done any nice toffees before? made some lovely toffee apples earlier this year and would like to try more :)

    Ditto, I've had half a bottle left in the fridge for ages!

    I just used this one:

    I sploshed some Chambord in at the end of cooking (maybe a couple of tablespoons :) ) I strained one of the jars so it's more like a jelly, it tastes nice but I would probably put a little more Chambord in next time :)

    I bought it to have in some nice Cava on Xmas morning but had already made the marmalade (using Cointreau) so thought it wouldn't hurt trying some in the jam :)
  • I was watching Jamie Oliver last night and the hot chocolate recipe. I have thought that I might make the mixture up in jars and give it to parents and kids in hamper/stocking as a present.....

    Try a small bit first. I made a similar recipe once - which was a huge batch.

    It tasted foul.

    Now maybe Jamie's tastes lovely, but do try a drink some before you make a load!

    Thanks Maggie, I might get the stuff this evening and try it on the kids when they stop over tomorrow. If anyone else has tried the recipe I would like to hear your thoughts.
