  • Making Baileys, Coffee and Chocolate fudge for friends, Clementine & Brandy marmalade for older relatives/family friends, and some kind of spiced cupcakes to take into work.

    I shall be making Baileys fudge as I do each year, but I am also making a hamper for relatives and I shall be including:

    Cherry, Almond and Cinnamon Granola

    Pistachio and Cranberry Cookies

    Christmas Biscotti

    Shortbread Stars (<< using this recipe)

    Chocolate Brownie Cookies - these are a favourite here anyway :)

    White Chocolate and Cranberry cookies

    I've made everything except the fudge and the granola and the uncooked cookies are in the freezer ready to go in the oven when I'm ready. I'm not usually this organised, mind you, so I expect something to go very wrong!

    how did you make them? also with the fudge how long will it keep for can i make it now and will it be ok for xmas day or shall i do it closer to the big day?:)

  • i made fudge and i have put it in the freezer i think it keeps for about nearly 2 weeks??

    When the jam was cooked, I sieved it to remove the bits and then added the bits to a tuppawear, added some value vodka and left it to infuse for 2 weeks.

    The lemon vodka was from this recipe using reduced lemons and value vodka

    I wash mine, rinse them and then dry them in the oven on it's lowest setting (mine is 50degrees) for an hour or so. This keeps them warm as well as sterilising them. But be careful when you take them out, they get hotter than you realise (as I found to my cost :( )

    also sorry to be a pain but when you used the left over raspberry and plum from the jam did you just add some vodka to it and leave it for a few days?
