    It's really simple

    340g desiccated coconut
    340g icing sugar
    400g tin condensed milk
    Pink food colouring
    8 inch square tin

    Mix all together really well mix will get really stiff but keep mixing. Half mixture and add some pink food colouring to one half again mix well.

    Put White half in tine press firmly then put pink half on top spread evenly. Then allow to set overnight Then cut into cubes or however you want xx

    Just started making peppermint creams. Then realised I don't have any peppermint essence. Doh.
  • Made some chilli Jam again this year as everyone loved it last year. Made double quantities this time. Also made onion and balsamic marmalade. Tastes great! I always deviate from any recipe but always turns out fine!

    I've made chilli jam; made 5 jars the other night and it was gorgeous so I'm going to make another batch!

    What marmalade recipe did you use?

    Thanks for that. I have loads of desiccated coconut that needs to be used up, I think I'll give this a go. Do you use a mixer or a wooden spoon?

    I made Christmas Rockie Road, Christmas Chocolate Cookies and White Choc and Cranberry Cookies last week for a local Christmas Fair that the Brownies were having. Everything went well, so I'm planning on doing another batch for my volunteers. Also Christmas Panforte and possibly Christmas Biscotti. I love the smell of Christmas baking :D

  • Pollyskettle - the Christmas biscotti is gorgeous - I made some to test and the other half is in the freezer waiting for its second baking. Really tasty. I've done blackberry and Chambord jam, clementine and Cointreau marmalade and pear picallili. Still to do are chocolate brazils, brazil caramel, breadsticks, need to marzipan and ice the Xmas cake (1 whole one to make little ones), shortbread and stollen. I got hamper baskets for a fiver in TK Maxx, 4 mini bottles of wine for £6 (I'm doing 2, one for my parents and one for FIL) FIL likes stilton so I'm getting a chunk to go in. Presents would probably have been cheaper but these days I find it really hard to buy "meaningful" presents these days. BTW, did anyone see Breakfast this morning about homemade gifts? I didn't see it all but one woman was really horrible about it! I just remembered that I need to get some sherbert lemons for my dad (mum says they give him wind though :) )
