My brother has an ancient cooker (Bramley we think) and won't use the apples so me and my mum have a field day
This year so far I've made
12 jars (bottled in syrup for pie filling/crumbles)
Apple and ginger jam
Bramble jelly (I have a recipe which uses the apples for pectin)
Apple and raspberry jam
and currently have Plum and apple mincemeat 'soaking' overnight..tomorrow I have Apple,pear and ginger mincemeat planned as well as St Delias
My mint has gone mad too so plan to make some Mint jelly with some also..only half a ton more to go :rotfl:0 -

I have three apple trees in the garden and two on the allotment, so think yoursef lucky! Four of mine are eating apple trees too. I can easily get 1,000 apples a year........!
I make a lot of apple jelly, either solo or with brambles or raspberries added for colour and a different taste. I'm told you can make an apple and orange jelly too, for eating with duck or pork. I use this jelly for glazing meats, as a hot drink (great for sore throats), as a filling for puds and as a substitute for golden syrup for pancakes and upside down puds. Oh yes, and for school fairs and Christmas presents.
I juice some...I don't pasturise or bottle it, just use it straight away.
I dry some in rings in the oven, and also in small chunks. Good for adding to muesli.
Crumble, baked apples, upside down cake with or without toffee, Eve's pudding, in fruit salad..
I bake apple rings with pork.
I freeze a few bags of chunks rolled in sugar and lemon juice, for future crumbles.
Everyone in the family is forced to eat an apple a day.
I store the absolute best ones wrapped in newspaper in fruit boxes scrounged from the local grocer.
I give bags of apples to the neighbours and Hubby takes them into work in bags of 8.
I have a friend who makes apple wine, so he gets some and I get a couple of bottles back as wine eventually.
And the windfalls? Next doors chooks like apples, but there's only so many apples two chooks can eat! So the bruised and damaged ones get taken to a friend who keeps a flock of cashmere and mohair goats. Now 80 goats can indeed eat a LOT of apples, lol. So I don't waste any. You may not know anyone with cashmere goats of course but you might have a local children's park or zoo with a few pigs or horses or donkeys that like apples? Or know anyone who keeps horses?

We have a few trees too, we just peel, slice and freeze them, they do just fine.
Throughout the winter we take out what we need and make crumble or pie of apple sauce. When we make crumble, we just make the topping and put it in the oven with the apples still frozen.
DH and I peeled and cored for a whole day last Autumn and filled up a dustbin sack and stuck it in the end of the chest freezer."There is no substitute for time."
