    I made an upside-down cake with dessert apples not long ago. It was lovely, I just didn't put any sugar on the slices but added a light sprinkling of cinnamon. I ate it as it was but I'm sure that it would have been really good with creme fraiche, cream, Greek-style yoghurt or custard.

    BAKED APPLE IN PASTRY

    Baked apples for consenting adults.

    Serves 2

    INGREDIENTS

    1 sheet (½ a packet) of frozen ready rolled puff pastry
    2 large apples
    The peel from ½ a lemon
    2 tablespoons of French brandy, Irish whiskey, Scotch whisky, etc.
    2 tablespoons of butter
    1 tablespoon of honey
    Milk for glazing

    DEFROSTING

    Defrost the frozen pastry according to the instructions on the packet.

    METHOD

    Peel and core the apples.

    If you have a grater, use it to grate off half the lemon peel. If all you have is a paring knife, use it to carefully peel half the lemon and then cut the peel into very fine strips. Save the rest of the lemon for something else.

    Put the spirit, butter, honey and lemon peel in a bowl. Mix thoroughly.

    Stuff the mixture into the hole in the apples.

    Unroll the sheet of pastry and cut it in half. Wrap each apple in the pastry. If the pastry tears, moisten a spare bit with water to make it stick, and use it to patch the tear.

    Brush or wipe the pastry with a little milk, which will make it come out of the oven shiny.

    Put the apples in an ovenproof dish.

    Cook in a preheated oven at 180°C, 350°F, gas mark 4 for 25 minutes, until the pastry has gone golden.

    ADDITIONS & ALTERNATIVES

    Use cooking apples for preference, but eating apples will do.

    Serve with cream, crème fraîche, custard, ice cream or yoghurt.

    Hi, I seem to have a glut of eating apples (kids asked for them and then haven't eaten them. They are past their best to eat as they are. Any ideas what I can do with them please?

    I happily use eating apples for tarts, apple compote or apple dumplngs, or baked apples. The kids might eat them as a pudding if cooked in some way.:). I like apple sauce with yogurt, or porridge or cereal for breakfast. When having for breakfast i sometimes add some orange flower water. If you cook them in slices with a little knob of butter, some cinnamon and a wee bit of sugar or honey you could serve them with yogurt, a splash of cream or in pancakes (add a splash of brandy for grown ups).

    Apple crumble & custard would be my solution, chop & freeze any you can't eat as a pudding.

  • Apple flapjacks work well and the fact that they're eating apples give them a bit of extra bite... Yum! Or you could try apple streusel muffins. Otherwise why not mix them with a cooking apple and you get a mixture of textures but still some of the cooking apple taste.

    Core, chop out any bad bits, put in large pan with a squeeze of lemon, splash of water, cinnamon, nutmeg, and sugar to taste. Don't boil until complete mush though!

    This can then be used as apple sauce, basis for an apple crumble, apple compote etc and can be freezed.

    Hi
    Just wondered if anyone had any ideas of what to do with a bag of bruised apples which i received in my As&a shop today think they were thrown rather than delivered!
    I know i could do a crumble, pie or cake but was wondering aboyt some sort of tray bake or cereal bar thing, as i think the kids would like that. Also how long will it keep once made, i'm assuming that something with fresh fruit won't keep as long?

    apple curd is lovely and keeps for ages in the fridge. I can't fubd the recipe at the moment but it came from mse.
