Hi, I'm sorry to bother everyone, but I was wondering if anyone had some quick ideas of what to do with apples that are getting past their best.
It's just when banana's are on the way out I do a banana bread - does anyone have an easy equivalent for apples please?

Apple cake
Ingredients
2 eggs
250ml vegetable oil
400g caster sugar
275g plain flour
2 teaspoons ground cinnamon
1 teaspoon bicarbonate of soda
1/2 teaspoon salt
1 teaspoon vanilla extract
500g cored, peeled and diced apple
Preparation method
1.
Preheat oven to 180 C / Gas mark 4. Lightly grease and flour a 20x30cm cake tin.
2.
Beat vegetable oil and eggs until foamy. Add the sugar, flour, cinnamon, bicarbonate of soda, salt and vanilla; mix well. Stir in the diced apples. Spoon mixture into prepared tin (it will be very thick).
3.
Bake in preheated oven for 30 to 40 minutes. Cool cake in tin for 10 minutes before removing.
Apple and Almond cake
5 eatting apples
175g light muscovado sugar
175g muesil
225g sr flour
55g ground almonds
2 tsp mixed spice
225g butter melted
1 egg
2 tablespoons demerara sugar
Pre heat oven 180 c gas 4
8 inch tin
Peel, core dice 3 apples
Mix muscovado sugar, muesil, flour, almonds, spices
Stir in melted butter beaten egg into dry ingredients
Tip half cake mix into tin, press down
Put diced apple on top add rest of mixture
Slice the other 2 apples cores with skin on and arrange on top
Press down sprinkle with demerara sugar
Bake for 35 - 40 mins
Leave to cool in the tin
Sprinkle with icing sugar

My usual is crumble. Make a batch in foil containers and freeze part- or un-baked, then they can go from the freezer into a low oven for about 40-60 mins while you're cooking the rest of your meal on a night when you fancy a pudding. Put the oven up at the end to brown the top if needed, or if it is already getting too brown use a bit of foil. Serve with cream or custard.Trust me - I'm NOT a doctor!0

Depending on how many we have... If we've got a couple, I'll do apple pancakes - cut the apples up small and add to american pancake mix. I use an egg free mix, can't remember where I got it from...
1 cup flour
1 teaspoon baking powder
1 tablespoon sugar
cinnamon to taste
Mix together.
Add 1 cup of milk (I use soya)
1 tablespoon oil
2 chopped apples
Stir well, cook in tablespoons in frying pan.
If I've got a lot, I do stewed apple and freeze it in usable blocks.0 -

I have, very kindly, been given a shed load of apples. I have two of the large Next carrier bags half full of them. I'd say a good few kilos. I have no idea what to do with them as my OH doesn't like cooked fruit... and I am a Weight Watcher... so I was thinking of doing something that I could give as Christmas presents out of them?
Maybe I could make crumbles and freeze them in those silver trays you get (like a chinese take out), make some nice labels and then give them to my family at Christmas? Kind of like how you'd buy them from a farm shop?
Or, what about preserves, like Apple Jam (does that even exist?!)0 -
