    or peel dice and use with a couple of parsnips to make a delicious soup.I use my bendy parsnips and wrinkly apples to make the soup and just add a stock cube ,water and cook until soft. I chuck a wee bit of cinnamon or nutmeg in when I'm cooking to give it a wee kick then whizz in the blender.Lovely nutty flavour soup

    I wish I'd had the foresight to cook some down when they were in the fruit bowl going soft - I made some spiced red cabbage the other day and could have done with it a bit of tired cooked apple stirred through it half way through. In future, I think I'll peel, core and chuck them in a bowl with a bit of butter and zazz them until they're mush, and then freeze them in an ice cube tray. So - that's what I'd do with them.
    Better is good enough.

    I second chopping them up in small pieces and microwaving in porridge. delicious served with a small sprinkling of brown granulated sugar. Or grate/slice thinly innwithnleanut butter sandwiches. Or slice into matchstick since s or grate and mix in with coleslaw.
