You could slice them up and dry them? I remember my Gran having strings of apple slices over the rayburn. We're lucky in having a farm locally that will press your surplus apples for you and either return the raw juice for you to make wine or cider, or they'll pasteurise and bottle it for you - it keeps unopened for a year. They'll also turn it into cider if you like, but depending on your apples, it can be awfully dry and tart!0

My neighbour gives me apples and make the usual pies and crumbles but also stew the apples and keep in a box in the fridge and put them on my porrige or cereal in the mornings.. Apple cake is nice too..#6 of the SKI-ers Club :j

Stewed apple: Peel and slice them and pop them in a pan with a centimetre of water at the bottom of the pan. Leave for about 20mins on low heat, then stir in some sugar to taste.
This is delicious with some natural yoghurt, or use it as an apple sauce with pork. Would be very nice with rice pudding too! Plenty of uses for it. You could put some in a pyrex dish and top it with sponge mix to make an Eve's Pudding.0 -

Discovery needs eating in the next month; Bramleys will keep until next spring as long as you weed out any with holes or bruises. Same with Golden Delicious as long as you keep them cool and moist.If you've have not made a mistake, you've made nothing0 -
I can remember being taught how to make baked apples in cookery lessons in school - and I havent seen it done in years, but its delish! allow one large apple or two small apples per person and core each apple then cut horizontally all around the middle of it (the skin will split at some stage and it looks better if you have done it yourself! sit the apples on a baking sheet and fill the hole with a mix of
Dried fruit or sultanas
honey or demarara sugar.
Put into a hot oven for around 35 - 45 minutes until the apples are tender all the way through. lovely served with custard or cream or creme fraiche.0 -
I was sitting in the solicitors office today waiting for my appointment - when I suddenly remembered how nan did baked apples! She didnt have a corer so would cut the Apple in half and take the core out, then put mincemeat (left over from making mince pies usually) in the hollow. she always put a little water (about quarter of an inch in the bottom of the pan too) dot the apples with a little butter, sprinkle with sugar and bake for about half hour or so? this was a late December treat if I remember rightly, but she may have done it in January too.0

I have two huge boxes of apples we have collected from our tree.
A very good friend (who is much more into gardening than me), said I can peel & core & slice them & pop them in the freezer to cook with later.
I hope she's right, as that's what I plan to do. I can't see myself managing anything more than peeling & coring them before winter!0 -
There are loads you can do with apples. We stew lots and freeze them in takeaway cartons it's the perfect size for when you want to do an apple pie or apple crumble. Another thing that's lovely is Apple tart or one of my favourites is Apple Bread & Butter pudding with chocolate! Just layer the bread/stewed apples/choc chips cover with the eggy mixture and bake. Even better with some cinnamon dusted over!0
