Lots of Mushrooms. What to do with them?

    I love mushroom stroganof and this is the approx. recipe I use.

    Fry a sliced onion (or two) for a few minutes then add loads of thick sliced mushrooms and a little extra oil if needed. Continue to fry for 5 mins or so until slightly softened then add vegetable stock to just cover. I like a mix of stock and red wine if I have any as it gives the dish a darker colour and flavour. Simmer for 10 minutes or so until stock is reduced to hardly anything, take off the heat and add a pot of sour cream or natural yoghurt stirring it in a little at a time to stop it curdling. Quick and cheap, lovely with pasta or rice and good made with other veg like peppers for a mixed veg stroganof. I think my original recipe came from the grub on a grant cookbook which I still use sometimes as it has some great cheap recipe ideas.

    We love mushroom pate, and it is very easy to make. about 500g mushrooms in the blender with one onion, fry up in some butter. make bread crumbs with one slice of bread. Add the mushrooms and the onion in the breadcrumbs and also one small tub of cream cheese (Philidelphia type stuff). its lovely on french bread! But it doesn't freeze at all. I made some for everyone at Christmas as pressents, they loved it!

    I must have very simple tastes i love a mushroom sandwich it makes the bread go black yum

    yuk lol cant stand mushrooms but the other half does. we have a mushroom farm (factory) near to us and i go and get his its a 1/3 of the shop prices and you get the ones harvest that day, so if any of you have one of these farms so to speak near to you why dont you ask if you can buy some mushrooms cheaply

    Ok guys I need lots of mushroom recipies :D I bought a large tray over the weekend and the other half beign considerate but not practical bought some too bless him lol!!!

    So now I have a fair few mushrooms I am struggling to see how I'll eat before they go yucky :(

  • Are they big?

    If they are put some pesto in the middle and scatter some grated cheese on top and cook in the oven for about 30 mins - yummy!

    Also you could chop them up and put them in freezer bags and freeze - then everytime a recipe calls for chopped mushrooms you'll have a load ready. HTH

    Mushroom Stroganoff is nice and very quick. Put a chopped onion, garlic clove, 1lb mushrooms + 100ml vg stock in frying pan. Cook for 10 mins until soft. Add a tblsp tomato puree and a small carton of natural low fat yoghurt. Heat through and serve.

  • Dry them!!! The taste intensifies and they keep forever, just line them up on a radiator for 3 or 4 days.
    The quicker you fall behind, the longer you have to catch up...

    Do you have to prepare them in any way first Mr P? Or just clean them and line them up?
