Lots of Mushrooms. What to do with them?

    Or you could slice them up and freeze them?
    Organised people are just too lazy to look for things

    Right have sliced a load and stuc them in the freezer, but still have quite a few :) I might give drying some a go too :) I know my aunt and uncle dry the black trumpet mushrooms that grow near them (they are VERY good at mushroom hunting! but as they live in Denmark they are a tad far away sadly :( ) and they usually turn out yummy! And they'll keep forever... I think if I can manage to dry these ones then I might get more experimental and try to dry other mushrooms (I'll buy them thanks... wouldn't know a poisonous one if it slapped me in the face :rotfl: )

  • You can slice them or if smallish dry them whole, they are great in soups etc and reconstitute in hot water or hot milk. It is also possible to grind them up to make mushroom powder for instant taste. I thread mine on cotton and hang them as mushroom necklaces in my larder.
    The quicker you fall behind, the longer you have to catch up...

    Mushrooms on toast for lunch?

    I love this, put them on toast - loads of black pepper and a little vinegar (beleive me it works) delicious.

    i absolutely cant stand them - soggy wet sponges :(:p _pale_ - so the only advice i can offer is to chop them up small and add them to anything and everything!

    perhaps someone who does like them can give a cream of mushroom soup recipe :A ?

    I use loads of mushrooms in a veggie melt.

    Lots of chopped veg (I use mushrooms, courgettes, onion, spring onions, red pepper) soften in a pan. When soft throw in a big handful of cheese, my personal preference is mozzerella and cheddar mixed, stir until cheese melts or bung it under the grill. Serve with a slice of crusty bread or toast ;)

    Hi All,

    Just to say i wen tshopping today and brought a box of mushrooms - organic and to be used by tomorrow so reduced to 32p for a 200g box. anyway i intend to do shepherds pie tonight sio thats some gone.

    Anyway i came home put them in firgde and noticed i have a bag fo loose mushrooms still in there that are looking a bit worse for wear so will need using quicker (will put these in shepherds pie and leave the organic ones to use tomorrow for something.

    but i need some ideas please - both me and bf are not a fan of mushroom soup though!!

    you can use them in omeletes, stir frys, etc..

    I am not sure if you can freeze them?

    I have a recipie for mushroom stroganoff which is really nice and creamy!

    my favourite veg! Mushrooms are so yum!!!!

    Ok, what do I do with them...

    Get a job lot of them and lighlty fry them in oil with soy sauce or lea & perrins & have on toast or even if you have in a breville toasted sandwich YUM

    fry off & have with beans on toast

    slice loads up, and make a pasta sauce with a wizzed up tin of tomoatoes, chopped onion. garlic, whatever random other veg you happen to have in, this wil freeze well, you can have it as a lazy lunch or dinner when you cant be bothered to make anything from scratch

    Really easy mushroom risotto
    Serves 4

    Preparation time less than 30 mins
    Cooking time 10 to 30 mins

    Ingredients
    1 tbsp dried porcini mushrooms
    2 tbsp olive oil
    1 onion, chopped
    2 garlic cloves, finely chopped
    225g/8oz chestnut mushrooms, sliced
    350g/12oz arborio rice
    150ml/¼ pint dry white wine
    1.2 litres/2 pints hot vegetable stock
    2 tbsp chopped fresh parsley
    25g/1oz butter
    salt and freshly ground black pepper
    freshly grated parmesan cheese, to serve
