Lots of Mushrooms. What to do with them?

The other half and I eat a LOT of mushrooms, and knowing that I'm trying to save some money he decided that buying a 2.7kg tub of mushrooms (going cheap) was a good idea!! Now I have this tub, and I'm stuck for ideas of what to do with them. Any ideas would be much appreciated!

    Ooooh mushrooms! Yum!

    Amongst other things I cook them in water with a chicken stock cube in. cook right down so there's only little bit of juice left then pour straight over jacket spuds. No need for butter so not only very cheap but very healthy! :)

  • Mushroom Omlette - mix 2 or 3 large eggs with the sliced mushrooms together with a bit of salt and pepper and a knob of butter.

    Put the mixture in a hot frying pan with a little olive oil to stop sticking. Let it cook so that the bottom but not the top is set. Then put the frying pan under a hot grill for a minute - the omlette will puff up as the top it cooks.

    It is quite a substantial meal (have it with a mixed salad to help you get your 5 a day)!

    Mmmmmmmmm. We love mushrooms in out house!

    Mushroom risotto - make a plain risotto & fry mushrooms with some garlic to serve on top. Much tastier than boiled mushrooms if you put them in with the rice.

    Garlic mushrooms on toast - leave mushrooms quite chunky, cook slowly in butter, garlic & parsley & serve on thick hand cut slices of toasted bread.

    Serve them as your vegetable sidedish. Go all 70's & have steak, chips, peas, a grilled tomato & some fried mushrooms!

    How about garlic mushrooms or - if there are any large ones- stuffed mushrooms.

    They are nice with tomatoes, onions and garlic served with pasta or rice.

    oooo, I LOVE mushrooms too. :D Just had mushrooms with my scrambled egg.

    Big flat ones stuffed with couscous and cheese.

    Mushroom stroganoff is luverly but I dont have a recipe to hand as I dont cook it very often - I'm sure a quick search on google would find one though.
    Sometimes it's important to work for that pot of gold...But other times it's essential to take time off and to make sure that your most important decision in the day simply consists of choosing which color to slide down on the rainbow...

    I get them when they're going cheap too and just chop them up and freeze them before they go crinkly. When you need some for a casserole just bash the frozen lump a few times and hope a chunk falls off.

    mmmm - mushrooms on toast

    I think you can dry mushies in the oven and then plonk them in things with stock or water to reconstitute them but you'd have to hunt out a method as I've never done it, but I believe it intensifies the flavour.

    I put 'shrooms in my bolognese sauce to bulk it out and it freezes totally fine with them in

    I love mushrooms with bacon and eggs (with potato bread, soda bread, and tomato). I buy them when they're reduced in price and cook them in butter, then freeze them in portion sizes to defrost as needed.

    Another use if you find loads cheap is mushroom soup.
