I just wanted to share a brilliant recipe I found for mushroom risotto - and there's no cream or anything in it so it is nice and healthy, and it's pretty quick and easy too!

I can second the recommendation for this recipe - I got it out of the BBC Good Food mag a while back, and it's one of my favourites. :T
I find the quantities quite large though - (for us) this recipe makes enough for 6 (depends on your portion sizes I guess)
It also freezes well, so no problems if it does make too much! I only make 1/2 the recipe (2 of us), and of that we eat 2/3rds and freeze 1/3 for another meal with sausages or something to fill up.Save the earth, it's the only planet with chocolate!0 -

Yeah I usually find that it does make a lot, usually it makes enough for three large portions in my house :-) I usually eat it with some nice buttered bread too!0 -
I bought a huge punnet(?) of value mushrooms 2 weeks ago and they have now all started to get very close to needing throwing, what can I make with them?
Did think mushroom soup but wondered if anyone else had any tried and tested mushroom recipes

Mushroom stroganoff!
Sauté the sliced mushrooms, with some onion if you got it. Get 'em nice and soft. Add some white wine (could probably use veg/chicken stock) and mustard (pref wholegrain), simmer for a bit (10 mins?).Stir through some yoghurt/sour cream/creme fraiche/similar. Serve with rice.
If you have any meat around, it's good with pretty much any cubed meat added.0
