Thanks for your suggestions... I'll make carbonara I think, it's something that is nicer with cream than just with eggs, which is how we normally have it! i have 600ml of single cream left by friends at weekend. i dont usually bother with it, so its at its sell by date untouched
any ideas how i can use it up?

I've got a moosiv chocolate cake form Costco that needs eaten. I'm afraid single cream doesn't freeze well as it is lower in fat than double and whipping cream and tends to separate when frozen.
There's an earlier thread that might give you some ideas for using it up so I've added your thread to it to keep the suggestions together.

If its any help, the recipe I use for quiche is
8" pastry shell (I'm sure you know how/can look up how to make short crust pastry)
Into this place: a few chunks of chicken-style Quorn and about 4 cherry tomatoes, halved.
Grate a couple of ounces of cheese (cheddar or similar) over the top.
In a bowl, beat together 1/4 (quarter) pint of cream (it works with single or double), two eggs, and a good helping of freshly ground black pepper.
Pour this over the other stuff in the pastry base and bake for 45 mins at 190 degrees C.
You can also bung in herbs, seeds (sunflower or suchlike) or if your a meat-eater you can put ham instead of Quorn (never tried this, but the original recipe I adapted it from mentioned ham).
