how to use up single cream?

Mango Chicken
mix cream with mango chutney and pour over chicken breasts (cut into large chunks) - cook for just over an hour. 10 minutes before ready add fresh mango or tinned

I don't have amounts but roughly 1/2 pint cream to 1/2 jar sharwoods mango chutney with 2-3 chicken breasts

A friend has given me a big pot of single cream that has gone out of date, but on checking it is fine, and I was thinking of making some sauces with it and then freezing them.
If I make a cheese sauce with the cream and freeze it, will the sauce be ok when it's defrosted?

I have done that and it was fine. I would make a bechamel - the use of flour to thicken seems to make a difference to how it freezes.
I keep some frozen plastic bags of bechamel by me.0 -
