Inspiration deserts me at the moment but you can grate it and freeze it in a tub or bag. Use from frozen.

Stilton and celery soup, stilton and leek soup, stilton and walnut dumplings in a stew, stilton and walnut tarts, stilton stuffed mushrooms, I think i saw somewhere a stilton and walnut pate too! stilton cheese sauce on steak, stilton and apple salad, and all these freeze once cooked, or just freeze it as previously said in batches so that you can take it out when needed. Alternatively, apart from smelling, it will last for AGES past the "sell by / use by" date and will only get better.

The stilton will probably last a while longer in the fridge...I find it tastes even better after it's best before date. If you don't want to leave it you can freeze it in portions that you would use, although it can be more crumbly after freezing so perhaps best used in sauces and soups.
There's an earlier thread with lots more ideas that may help so I'll add your thread to it to keep the suggestions together.

thanks, i did do a search but didnt find anything! thanks for the suggestions.. i am thinking i will just chop it into cubes and freeze it for a later date at the moment, maybe just use a bit on some pasta tonight... it is stinking the fridge out!! lol
i do like blue cheese in pasta, etc so it will let me use it all year!0 -

any ideas what I can make with a big block of left over stilton? my oven has broken but I have the hob and also a SC - made broccoli and stiton soup earlier in the week so looking for something different ( but can be soup)

Stilton goes well with bacon or walnuts so you could mix it with pasta. I also had it once with banana- sounds a bit strange but tasted ok as far as I remember. Could you make cheese on toast or some type of improvised Welsh Rarebit or if it's served with a fried egg Buck Rarebit? Pizza topping? Nice chunk with crackers and a glass of port?

Aril - thank you so much for your ideas. Am pregnant, so as much as I would love the port, no can do!;) going to try and see if there is a soup recipe with bacon and stilton as have a full pack of bacon in fridge - also going to have a look at the site you mentioned. thanks again0

Stilton crumbled onto a nice bit of sirloin steak goes down a treat. Also crumbled onto a green salad with some bits of crispy bacon.

Lightly fry some whole mushrooms with garlic in butter and then crumblesome stilton on top till it melts, serve with crusty bread and salad - lovely, you will get like a butter sauce to pour over as well. Also stilton freezes OK - I've froze loads left over from the bargains at tesco before xmas.Mama read so much about the dangers of drinking alcohol and eating chocolate that she immediately gave up reading.0

I'll second the Freeze it vote. I had a 1/4 round of stilton left over from last year and cut it up into inch square chunks, wrapped each in clingfim and put all in a couple of chinese tubs in the freezer. defrosted and used as normal or chucked into soup/risotto straight from the freezer.
