Chop some stilton, add some grated cheddar, a bit of grated parmesan and some cream cheese (or fresh goats cheese) to make a sauce for 4 cheeses pasta - basically you throw all the four chopped cheeses on freshly cooked pasta while it is still hot and the heat melts the cheeses. You can add a small knob of butter first to make the pasta less sticky.
Also the 4 cheeses, grated and mixed, are good as topping for 4-cheeses pizza.
Or use as if it was gorgonzola with polenta: cook polenta, serve with a rich tomato sauce and a chunk of stilton on the side. You can even crumble the stilton and layer it between two layers of polenta and then cover with sauce and put in the oven for a few minutes to melt it.Finally I'm an OAP and can travel free (in London at least!).0 -

I have to say I am unfamiliar with the concept of 'left over' stilton. It gets eaten for ****s sakeIf there's any left over you/your guests haven't been trying.
To be more serious there's loads of ideas here:

That is precisely the problem! Ive never had left over stilton before as we have always snaffled it up quickly so this year I brought extra and made everyone hold back on it hence left over stilton! However at least it gets better with age! :jMember 1145 Sealed Pot Challenge No4
