what can i make with stilton??

morning all :D last week doing my shopping i bought a huggge piece of stilton type cheese off the deli for 30p :D this was before my diet started again on mon of course :o anyway neither ds or oh will touch it with a bargepole as its going "mouldy" according to them (a blue cheese going mouldy! you dont say :rolleyes: ) i was thinking of maybe a soup but im unsure of quantities and could i freeze it?:confused: or is there anything else i could hide it in??:confused: the only other thing i came up with was a quiche but again im the only one that would eat it and its hardly figure friendly!:o
any suggestions would be very welcome...cheers angchris

    Stilton & walnut pie with a wholemeal crust is nice (fattening, but nice) and I've frozen it in the past. The crumbled stilton, and roughly chopped walnut filling is hald together with a quiche style mix of eggs & milk/cream.

    courgette and stilton soup?

    You need about a pound of courgettes and 1 onion, roughly chopped, soften in a little butter and oil over a medium heat (keep an eye on it, might stick, so be prepared to stir). Then add water or stock to cover (about a pint should do, or a bit more if you like a thinner soup), and cook till vegetables are tender. When cool enough, sieve or blend til smooth (or do like I do and whizz it in the food processor). Finally, pour back into saucepan and heat up again, add crumbled stilton to taste, stir over a gentle heat until cheese is melted. Add salt and pepper to taste, plus a little cream if you like. Serve with crusty bread. Any leftovers seem to Keep in the fridge for a day or two.

    Or make potted cheese (not in the least diet-friendly:) )
    Mash stilton with or without another lump of cheese-it's a good recipe for using up bits of old cheese. Mash in an equal quantity of butter (not marge), add a splash of dry sherry or brandy and some cayenne pepper/worcester sauce (optional).
    Use as a spread on crackers with celery sticks. Keep in the fridge, or wrap in little logs and freeze for Christmas. You could add chopped walnuts too.

    you can crumble it and put in a salad, if you add some walnots it's even nicer.
    If you can't use it all just cut it in small pieces, wrap them individually in clingfilm and freeze them, they will come handy another time.

    You can crumble it on top of steaks, burgers etc. It makes a change and they taste yummy.

    Stilton and onion bread is delicious and totally hides the stilton (but not the flavour).

    One of my favourite sandwich's is stilton, pear and rocket - grilled. Yummy. (Cook the pears sliced for a few minutes in a pan first).

    White sauce with stilton added makes a lovely cheese sauce - try it on pasta or a vegetable bake.

    never thought of using it as a cheese sauce, thats a good idea! might investigate doing some kind of pasta n broccoli with cheese sauce:D i already have tonights tea sorted thanks to mr t`s reduced to clear shelves :T so thats given me something to think about for tommorrow which will of course turn into the most delectable treat and everyone will ask for seconds! or maybe not knowing my cooking :rolleyes: theres way too much to use in 1 go so i will break a chunk off and freeze the rest in portions. thanks for your suggestions so far will defo use them when i come to use the rest of it

    Cut a little slit in a chicken breast and stuff some stilton in there.

    Or even better, chicken thighs, stuffed with stilton and wrapped in bacon or palma ham - very, very tasty. I did these one New Years Eve when we were snowed in and had to eat out of the freezer!
