Pasta with stilton and nuts crumbled through would be yummy alone or especially with bacon. Or a warm pear, stilton and hazelnut salad? Or chicken stuffed with stilton and nuts?

For me though, any excuse for some cheese and biscuits :D

Once in a posh hotel I had a lovely starter of deep fried battered broccoli with a stilton and walnut mayonaise.(not sure if hazelnuts would be much different)

We were given a gift pack with a mature stilton cheese and a bottle of port in it. Now the port I have no problem with but using up the stilton is proving awkward....it is incredibly strong (and I do like my mature cheeses). I tried it on crackers but it beat me!!:D .Unfortunately DH doesn't eat cheese at all and DS who eats a lot of cheese keeps running from the room with his hand clamped over is nose every time I get it out of the fridge. I've already made a batch of broccoli and stilton soup.
What other things could I do? At the moment all I can think of is chopping it into cubes and freezing it so I can use it up very gradually by plonking the odd cube into homemade soups.

i think you can mix it into bechemel sauces, combined with another cheese it would be quite good. you can also freeze it. We've a similar problem, i got OH a huge block of stilton for xmas and he hasn't eaten it all. I'm gonna suggest he whack it in the freezer and i'll use it, and buy him more stilton soon to "replace" whats been used from his xmas present.

Quiche would be great. With bacon, onions and mushrooms - really tasty.

    Good luck

Crumble a little into mayonnaise and add a little white wine vinegar to make a lovely blue cheese type dressing.

Cut into smaller pieces, wrap and freeze until you need to use.

Make more soup and freeze that.

Send it to me and i will make some more pork and stilton sausages:D :D

Stuffed Mushrooms are great with a Stilton and breadcrumb Stuffing and if you use those great big mushrooms they are incredibly filling too

  • I made macaroni cheese with a mixture of cheddar, stilton and edam and didn't get any complaints.
