How about a red onion and stilton tart?

Just use bought filo pastry and form into a tart case shape on a baking sheet, brushing each layer with melted butter before shaping. Chill while doing onions

Prep caramelised red onion (small onion cooked slowly in butter, adding a teaspoon of sugar and few drops of red wine vinegar or just red wine). Cook until soft. Allow to cool before putting into the tart case.

Add crumbled stilton on top and cook until cheese melted and pastry brown on top.

    Very easy and very tasty!
:D Thanks to MSE, I am mortgage free!:D

Great ideas on here! Wish I'd read it before using up the last of our stilton - although our usual broccoli and stilton soup tasted delicious and I have loads of it safely in the freezer now!

Just remembered. Field mushrooms pan fried and served on toasted sliced crusty bread in an au poivre and blue cheese sauce.

You can freeze it for later :D

As this has fallen from the front page of OS, I'll add it to the existing thread to give you more ideas.

As always in our house there is a wedge of Stilton leftover from Xmas. I don't want to throw it away - I'm fed up with cheese and crackers, likewise my Broccoli and Stilton Soup so I'm looking for inspiration from you lovely folks.
So far the thing that tickles my fancy most is this recipe Stilton Mushrooms on Toast
    Any more suggestions?
  • Blue-cheese sauce for steak? Blue-cheese dressing for salad veg?
  • Jacket potatoes with honey drizzled over the stilton - takes a bit of the "blueyness" away & is a firm favourite in our house.
& as for some happy ending I'd rather stay single & thin :D
