That's funny pickle, I usually can't find crushed pineapple when I need it! It's in a fruit cake I make which I can post if you like, but I have this which I knew would come in handy one day - it's from that book using just 3 or 4 ingredients, but I haven't tried it:
Easy Pineapple Cake
250g SR flour
200g caster sugar
430g tin crushed pineapple
Preheat oven 180c. Sift flour into bowl, combine with sugar then add entire contents of tin of pineapple and mix till just combined. Pour into greased 22cm cake tin and bake for 40 mins.
Hmmm....no egg or butter? How would that work....? Sounds like a good cookbook u have thou0 -
Upside down pineapple sponge pud? Pour off the liquid into a pan, add sugar if there is none, simmer and reduce until it's a thick syrup. Put the pineapple into the bottom of a pudding basin, pour on the syrup, add a sponge mix on top and bake as per your sponge pud instructions.
Or "Eton mess"... make or buy some meringue and break it into pieces. Pour off the liquid and save it for a syrup for something else, pat the pineapple dry and add it. Whip some cream and stir it all together. Served in balloon red wine glasses it looks dead posh
Thanks, might try an upside down cake in the microwave :T0 -

I love boiled egg & spinach curry & also Jalepeno fudge
I can post how I make them if you want to try them.
PS How did you end up with so many eggs?Life is short, smile while you still have teeth0 -
Reading about all the eggs reminded me I had 9 to use up, so have made two massive meringues cooking slowly in the oven and when completely cold will freeze them for use on Boxing Day when we have friends round for the day. Mind you that is the plan, but it might be only one makes it into the freezer untouched as I do have a carton of double cream in and meringues with stiffly whipped cream topped with mandarin oranges have got to be my all time favourite dessert mmmmmmmmmmmNeed to get back to getting finances under control now kin kid at uni as savings are zilch

Hi, I have a bag of carrots and one stick of leek which I think has seen better days. I suppose I can chop the carrots and bung them in the freezer and likewise with the leek but any suggestions would be apreciated.
