Please HELP!
I'm just icing a cake for tomorrow and my mascarpone (sp) tastes sour. Is it supposed to? Is this normal? Please help, thank you in advance oh so clever old style people.0 -
ooh - You are using it for icing a cake? I would imagine that you would be mixing it with icing sugar which will sweeten it considerably. I may be wrong - but I thought that mascarpone was quite sweet - not sour.0

whenever i've used mascapone its never tasted sour, just very rich iykwim
are you sure its not off?'We're not here for a long time, we're here for a good time0 -
Thank you for your replies. I think you are all right and so unfortunately will have to stay well clear. I checked the date and it's fine but have a feeling maybe it wasn't sealed correctly. My carrot cake will just have to have the leftover lemon butter cream icing from the lemon fairy cakes.
Thank you again.0 -
Ill merge this with food safety later
Do you have any philidelphia to make cream cheese icing (there is a recipe if you google Rachel allens carrot cake), or can you make buttercream icing with butter and icing sugar and a dab of vanilla?A little nonsense now and then is relished by the wisest men

The chart downloaded from this site for the fridge, warns against using dairy after the use by date. What about cheese? The big slabs of Value Cheese from Tescos, have a best before date on them, but in tiny priint say once opened consume within three days. That's a lot of cheese to eat! Does cheese count as dairy for this chart?0
