Hi there
Does anyone have a nice recipe for buttercream.I make lovely cakes but i always think the buttercream lets me down.when i was little my aunty made cakes with the most scrummy buttercream ever shes not here anymore and i just cant seem to make the perfect buttercream.
any tips would be much appreciated

I alway add a little more vanilla than in the recipe otherwise you can taste too much butterI haven't got one!0

Hm...
Butter cream is just icing sugar and butter BUT...
..Your aunt may have added a few drops of almond or vanilla essence to give it that extra something.
Be-ro suggest creaming the butter on its own before working in the icing sugar bit by bit. HTH
Oh! If you're going to use butter in preference to marge (and in my book stork would be the best alternate) then make sure its UNsalted butter.

Thanks for this. It's my very favourite sweet thing (apart from chocolate.) I am tempted to go make some of those little butterfly buns now...

thanks for the tips i have not used vanilla essence so i will give this a try i have been putting a table spoon of milk into the mixture so im going to try the essence instead.

I find buttercream too sweet although my kids love it. I always use vanilla too. For chocolate cakes I've started using the Be-ro recipe for milk chocolate icing (on https://www.be-ro.com). I change it a bit, when the icing is made, I melt 100g milk chocolate and mix a little into the icing. Fill and cover the cake and then pour and spread the rest of the chocolate over. Takes a little while to set unless you help it along in the fridge but nobody ever has just one slice!0

I did a topping yesterday which substitued cream cheese for the butter and included half a teaspoon of vanilla essence (along with the normal icing sugar). Really lovely ... and of course there are none of the buns left todayEnjoying an MSE OS life0

I always add a scant teaspoon of hot water when making buttercream, this gives a slightly softer fluffier texture and also makes the whole thing easier to cream.0

If you find your buttercream is too sweet add a drop or two of lemon juice - you won't taste it in the 'cream' but it does counteract some of the sweetness.~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~
