Buttercream icing

  • Thanks everyone, i was fine with doing the buttercream until my friend said about it melting which made me panic! i did do i trial run and they did not melt in my kitchen and i get to eat the trial after yummy!! ialso thought that my icing on the cakes have never melted before! Gingernutmeg don't suppose you have a fool proof recipe for buttercream icing? how do the americans get it so thick?

    I feel stupid because i can make cakes and icing but i think nerves have got the better of me! i dont want to mess up my sisters cakes.

    My usual recipe is twice sugar to butter - so for every 1lb of butter use 2lb of sugar, a little milk and then add flavourings (vanilla etc). I've seen some American recipes where they add some 'heavy' cream (I assume that's double over here) but I'm not sure of the quantities. There's a recipe here on youtube that uses vegetable shortening and corn syrup too, if you fancy some experimenting - you could use Trex and liquid glucose as alternatives. She says somewhere in the comments that it stands up well to heat and humidity.

    Don't put it in the fridge!!

    You'll be absolutely fine to do it the night before, and even if it's fairly warm there won't be a problem!

    Twice sugar to butter is a good guide, plus a little water or milk to soften it slightly and make it easier to pipe onto the cupcakes, and whatever flavouring you fancy, but good ol' vanilla takes some beating! Make sure you use proper vanilla essence or actual vanilla from pods though and not vanilla flavouring.

    Made up some buttercream icing for a sandwich cake, however I have made too much. Can I keep it in the fridge and if so, how long for? Can it be frozen?

    You can freeze it for a few months..make sure it's sealed good though ;)
