    Hi newgirly,

I agree with the others, it should be absolutely fine providing your kitchen wasn't overly warm overnight. I've done this on many an occasion and never had any problems.

I'll add your thread to the Quick Questions on food safety / sell by / use by dates later as your query may help others.

Absolutely - it will be completely fine. Your kitchen would have to have 30C+ for the food to go off so quickly, within few hours. First few hours of the night it will be just cooling down anyway.

I often tub food and leave it to cool on the side and forget to fridge/freeze it until morning!

You'll be fine... I am just one who says... reheat well x

I've seen a program on the TV about rice... apparently you should never reheat a rice! There are bacterias in the rice which get really active once rice is cooked and it takes industrial technology to stop them (that is why you can buy cooked rice in a shop in a pack).

Anyone else seen it? I think it was "xxx's food factory" (I can't remember his name!!). I have reheated rice before now the next day and I was fine, but since seeing this I don't think I would do it the day after.. But I was never aware before.
  • I think that would be Jimmy's Food Factory; I have just had a look on BBC iplayer and it is no longer on there except for one episode "chocolate, yoghurt and peanuts". I too have heard that rice can be dangerous but I must admit that I have reheated rice the next day (very hot) and have not suffered any symptoms. What are others experiences?
  • I would definately not eat rice if it had been sat on side for a few hours but I cook rice cool rest by running cold water over it put in fridge immediately and use next day no prob.
Thanks to MSE savings we got to go to Disneyworld Florida.

  • I've made a huge bowl of rice to last a few days' lunches- always stir fried to reheat though, as I believe that the microwave will only reach boiling point which is not high enough to kill the bacteria. Frying it in a pan will though. No illness here so far :D

The bacteria in the rice isn't killed by cooking. What you need to do is stop it developing. Cool quickly. I always freeze bulk cooked rice and then reheat. Trick is not to leave it on the side to cool.
