    Yeah, somehow my 'helping' when he's cooking gets [STRIKE]mis[/STRIKE]understood as 'taking over'. He is learning slowly though - he's stopped asking if I want to go out for cheese burgers! I think it'll just take him time cos (bright as he is) once I've explained about one meal, he doesn't forget, he just has trouble applying the same principles to a new one.

    Here you go folks .... I have done the recipes before so will copy them over..

    Well folks I thought I would pop in and post that Mechado beef stew recipe I made the other day.... its scrummy -even though the ingredient combination seems a bit odd!
    Now I use my slow cooker -but you can always do it in the oven (you will need to add 350ml of water though)

    Mechado beef stew
    serves 4

    1 syn per serving on Red/EE
    1. 600g braising steak - cut into bite size chunks
    2. 1 medium onion -finely chopped
    3. 2 cloves garlic -grated/minced
    4. 2 large carrots -finely diced
    5. 2 red peppers - finely diced
    6. 1 bay leaf
    7. juice 1/2 lime
    8. 2tsp sugar 2
    9. 2 large tomatoes -peeled and chopped
    10. 1tbs tomato puree - 0.5
    11. 1tbs tomato ketchup - 1
    12. 2tbs soy sauce
    13. 1 oxo cube
    • drop the diced beef in the slow cooker and switch on -I use high..... you can brown the meat if you prefer
    • cook for about 1hr
    • add the crumbled oxo, puree, ketchup, garlic, soy, sugar and lime juice and mix well
    • add in everything else and stir
    • switch onto auto and cook until the meat is tender
    • if you need to you can strain off the liquid toward the end and reduce down -but we didn't need to.
    • oooh remove the bay leaf and serve
    it is supposed to be served on rice

    off to find the curry recipe...:D

    i am slinking back in here 3lbs heavier !!!!!!!
    i got to target and had 2 weeks off plan and one week massively over syns :o
    ok ok i can't eat sensibly on my own i need sw rules :rotfl:
    i am off out to lunch tomorrow so intend to enjoy today and tomorrow and jump back on plan first thing wednesday.
    i am cross with myself but also glad i weighed in this morning as i would never have noticed the weight creeping back on.

    i learnt something else too - white bread gives me huge chest pains - not nice :(

    right -whilst I remember -here is the latest recipe...
    I did it my own way in the slowcooker -so thats how I will write it but if anyone wants the oven version -just give me a shout ;)

    Slow cooker Goan pork curry
    serves 4
    0.5 syn per serving on Red/EE
    1. 900g pork(fat removed) -I used shoulder -diced
    2. 100ml white wine vinegar
    3. 2.5 fresh red chilies -deseeded and chopped
    4. 1.5tsp tumeric
    5. 1tsp yellow mustard seeds
    6. 2tsp cumin seeds
    7. 1tsp oil
    8. 3 large onions - chopped
    9. 4 cloves garlic
    10. 1" chunk of fresh ginger -grated
    11. oxo cube
    • Mix 2-6 in a non metallic bowl and add thepork
    • stir to coat and then cover and chill over night or for up to 24hrs
    • tip into the slowcooker and switch on - cook for about 1hr
    • heat the oil in a large non-stick frying pan
    • add the onions and once coated, sprinkle with a little salt
    • add the garlic and ginger and cook until the onions are soft and starting to colour
    • tip the onions in with the pork and add the crumbled oxo cube -stir to combine and then cook until the pork is tender
    Now, without the tummeric (I didn't use it as it stains everything and I KNOW I would have dropped it down me whilst cooking/eating :p) there isn't much colour to the finished dish -so you could always seal the meat before adding to the slowcooker. Also you don't get a thick creamy sauce its more of a juice -so you can always strain the juice into a small pan and reduce -but I left it in the slowcooker so long that I didn't need to :p

    Its a very distinctive dish and not heavy n rich (the original recipe describes it as having a "hot sharpness") -we loved it -(and I don't even like curry :D)so its another one on the "to do again" list ;)

    Thanks MrsM, I remember them now you're reposted them but I had copied them over to a word file and not saved them and lost them when some 'helpul' person turned my computer off!!! I have some pork in the freezer so I might give the curry a go this week if I have any white wine vinegar in (might have some cider vinegar).

    Im new to the forum thingy and feel i need to gain support from other sw members, im a target member and have been sucked into the festive cheer that involves everything thats synful!!
    Im going to post my daily food planner and starting from today!
    Breakfast-
    Tea- unsure of milk measurement
    Quality street X 6 (approx)
    Custard creams X 3
    Yummy short bread biscuits( calorie laden!!) X6
    Toast (800g) X2
    28g cheese
    X4 slices thin chicken
    Red sauce X 6 tbsps

    Lunch
    Quality street X7
    Cookies (7 syns each) X4
    Bananna X1
    cup of tea X2 (unsure milk)

    There... as you can imagine not a good day, got weigh in Thurs!
    Ps- had flexi day yesterday too- chicken wings, half portion of chips, 3 cookies and ben n jerrys phish food icecream!! I feel so bloated and disappointed in myself! as you can imagine, I know I shouldnt but I weigh at home too! I really need some support! Please help xx:(

    B - oats (HEB), ff yog
    L - HM SF pasta bake, HB egg
    D - 2 x tortillas (12syns), HM SF veggie chilli, cheese (2 x HEA), sour cream (3syns), lettuce
    Snacks - banana
    Drinks - coffee, fizzy water, NAS squash

    Total syns = 15

    Still have a HEB left so may have a fibre plus bar later

    Shortly off to weigh in ... wish me luck! Have missed 2 weeks due to terrible road conditions but no excuses tonight!

    I have to say I have felt a bit half-hearted recently but not sure why. I am doing EE. Probably the freezing cold. I've made some delicious SW soups which everyone has loved.

    Better go and see what happens!
