    Try baking the salmon with this crust. Mix fresh breadcrumbs (I always keep a bag in the freezer and no need to defrost) with a handful of chopped coriander and the zest of a lime. It's ready when it's crispy on top and the crust keeps the fish really moist. To make it really zing, squeeze a little of the lime juice into some melted butter and drizzle the crust just before serving. Mmmmm!:)

    I left my freezer door open on monday and I am desperatly trying to eat up what I cant recook and freeze.

    I have some salmon that was already cooked before freezing I need to use, and some filo pastry so i was thinking salmon parcels.

    Can anyone suggest anything childfriendly that doesnt use leeks or cream which most recipes seem to do, otherwise it will be rather boring

    Salmon and pesto always go well together, how about that in your parcels?

    If cream is out, is creme fraiche out too? I prefer CF for cooking, as it doesn't seperate when you heat it.

    I would probably refreeze the filo myself but I am a munchkin like that!

    Ill merge this later - let us know what you make. A simple sandwich with cream cheese etc may also be nice or fish pie?

    I have got some cooked salmon that I am going to freeze. But I don't know what to do with it apart from reheating it as it is.
    Any ideas on using it up?

    Stir it into some pasta with cream (loads of black pepper)
    whip it up to a salmon mousse
    salmon pate
    Fish Pie
    Salmon & scrambled eggs
    Quiche with watercress or spinach
    you will get lots more suggestions xx

    Cold with salad and a tartare sauce/mayo mix. Plain, cold, cooked salmon is absolutely delicious. Could add some new potatoes as well. Hungry now :rotfl:

    Make puff pastry parcels using the salmon and a small amount of cream cheese.

    Don't use too much cheese or it goes watery!
