My missus simply mixes a little garam masala with salt and black pepper, a little oil and plain flower, mixes it together, and rubs it over the fillets. Then pan fry until golden. You can put a little chilli powder in, but this way, the salmon is not overwhelmed.

My 89 yr old aunt's recipe... stir together soy sauce and lemon juice and pour over salmon, refrigerate for a couple of hours ,turn once or twice, put on a microwaveable plate, cover and cook in microwave for 2 mins. this is delicious either hot or cold and remains moist.

Marinade (about an hour) in light soy sauce mixed with chopped garlic, chopped spring onions and 2 tsp runny honey, salt and pepper. Grill for about 5 mins till sticky. serve with noodles and stir fry.

Add honey and chilli too. Honey coated salmon tastes incredible fried.

you cant go wrong with the 'holy trinity' of chinese food - soy sauce, garlic and ginger! then add whatever you like. In my case I always have spring onions and red peppers so would use those chopped finely.
  • sweet chilli sauce over them then oven cooked is lovely
