I am the only one in my household who eats salmon, so I usually only pan fry or oven bake a standard piece of salmon - please inspire me to make it different with your salmon recipes0

Salmon, potato and coriander curry (weight watchers but nice)
Ingredients
400 g Potato(es), Raw
4 spray(s) Cooking Spray, Calorie Controlled
1 small Onion, All Types
1 1/2 tablespoons Curry paste
1 cube(s) Stock Cube, Vegetable
200 g Salmon, raw
10 individual Tomatoes, Cherry
50 g Peas, Fresh or Frozen
2 tablespoons (as purchased) Yogurt, Low Fat, Plain
1 tablespoons Coriander, Fresh
Instructions
Cook the potatoes in boiling water for 8-10 minutes, until almost tender. Drain.
Meanwhile, spray a large frying pan with calorie-controlled cooking spray and heat. Add the onion and cook over a medium heat, stirring, for 3-4 minutes.
Add the curry paste, stir well, then pour in the stock. Tip in the potatoes, then gently stir the salmon chunks into the sauce. Simmer for 3-4 minutes, gently stirring from time to time.
Add the cherry tomatoes and peas and cook for a further 2 minutes, until the tomatoes have softened and the salmon is cooked through. Season to taste, add the yogurt and coriander and serve in warmed bowls.0 -
Pasta with salmon and asparagus (again ww)
Ingredients
100 g Asparagus, Raw
5 spray(s) Cooking Spray, Calorie Controlled
1 clove(s) Garlic, finely chopped
1/4 teaspoons (level) Chilli Flakes, dried
150 g Salmon, grilled, fillet
110 g Pasta, White, Dry, gigli or farfalle
1 pinch Salt
1/8 teaspoons Black pepper
1 tablespoons Lemon Juice
100 g Cheese, Soft, Medium Fat
1 teaspoons Dill, Fresh
Instructions
Snap off woody ends of asparagus, cut each stalk cross-wise diagonally into 2.5cm (1 inch) pieces.
In a non-stick frying pan heat cooking spray over medium high heat. Add garlic and dried chilli flakes, saut! for 30 seconds. Add salmon fillet and cook for 3 minutes on each side.
Meanwhile, cook pasta according to package instructions in lightly salted boiling water, adding asparagus 3 minutes before the end of cooking time. Dain well, return to the saucepan and add lemon juice and low fat soft cheese. Stir over low heat for 1 minute.
Separate salmon fillet into bite sized chunks, removing any skin and bones. Add to pasta, toss gently and serve, sprinkled with freshly ground black pepper and dill.0 -
Salmon and butterbean salad
100 g Salmon, grilled, flaked
50 g Beans, Butter, Cooked or Canned
100 g Sweet Potato, boiled or baked, cubed
20 g (as purchased) Walnut Halves, chopped
50 g Broccoli, boiled, cooked and cooled
1 bag(s) Florette Mixed Salad
2 tablespoons Lemon Juice
Combine all the ingredients in a large bowl, drizzle with the lemon juice and season to taste.0 -

Cook the salmon, heat up some noodles and add some sweet chilli sauce (the dipping one) and heat up with any veg (peppers, sugar snap peas, mange tout etc). Tip noodles in bowl and place flaked up piece of salmon on top. So yummy and quick0

Philly spread thckly over the top and then topped with
Crunchy breadcrumbs or scrunched up croutons or crisps.

I've used THIS Spiced Roast Side Of Salmon from the BBC Good Food website, it's nice. Obviously if you're only doing the one fillet you can make less of the marinade. There's loads more ideas for salmon on there too SALMON RECIPES0
