Salmon Fillets

I've got some frozen salmon fillets that I brought when they were BOGOF but I've no idea what to do with them.

We never had fish as children and I never dare order when out in case it arrives and gives me a beady eye:eek: so I have very limited experience in the fish department other than tuna pasta and fish fingers.

Any help gratefully recieved.

    I love salmon fillets poached in milk or a little stock or cooked in the oven wrapped in tin foil with a tomato and herb crust.

  • How adventurous are you, FTM? I have a few recipes. Some are hot and spicy, some are quite plain and others are creamy. Some can be barbecued, grilled or oven-baked.

    Try some light soy sauce, a little sunflower oil, some orange juice & some ketchup. 1 spring onion, 1 garlic clove or some lazy garlic, 1tbsp lemon juice, 1/2 tsp of minced ginger and english mustard. Mix together well in a bowl or jar. Pour over salmon steaks and chill for 30 mins. Grill for 15 mins, using some of the marinade on turning.

    Try one of these

    Marinate in teriyaki sauce (next to the soy sauce in the supermarket) for about an hour. Bake for about 20 mins. Serve with rice and stir-fried veg.

    Fry some good quality streaky bacon, the kind which produces lots of lovely fat. Remove to a hot plate. Fry the salmon in the bacon fat. Serve with posh mushy peas (frozen peas, cooked with a clove of garlic in the water and whizzed up with creme fraiche), and the bacon on top of the salmon.

    I love salmon!

    The only recipe I really use for salmon is to place each fillet on a piece of tinfoil pour 1 tbsp white wine on top and then place 1/2 a dried bayleaf and a sprig of parsley inside. You then scrunch it up to make a very tight parcel and place in the oven for 20-25 mins, you need to do this individually for each fillet.

    I love to serve this with a home made salsa

    Mine is

    1 avocado chopped
    4 medium tomatoes chopped
    1 small red onion chopped
    generous handful of coriander chopped
    juice of 1/2 a lime

    Mix together and serve this with the salmon and new potatoes are nice with it too (and the rest of the wine!).

    Try spreading some pesto on top and sprinkling some grated cheese over then bake in the oven for 10 minutes. Very easy and tasty
    It doesn't matter if you are a glass half full or half empty sort of person. Keep it topped up! Cheers!

    I like to think that I'm game for most things although I'm not a hot and spicy person. I love the taste and smell of the spices but I don't get on with the kick!
    Creamy sounds like something the kids might eat too.
    Like the sound of your marinade - under the grill as I don't think it's BBQ weather any more :( - absolutely bucketing it down here.

    Do they like pasta? If so my salmon and courgette recipe above might be a good choice for them as its got cream in it. Its very easy to make too.

  • easy peasy one for you then

    put salmon fillets in an ovenproof dish with a knob of butter on each one. Grate some nutmeg over each one and bake in the oven (200/400/Gas mark6) for 15 mins. Making the sauce: towards the end of the cooking time, take some dill and add to about 6-8 tablespoons of natural yoghurt or maybe creme fraiche. Warm through slowly. You could maybe add some mushrooms if you like them too. Add some seasoning if you feel its necessary.

    Living where I do we grew up getting a fair amount of "poached" salmon and them once the farms got going we used to eat a lot of that too, but my favourite way of eating salmon is cold ( I can't bear it hot!) poach in water and vinegar, take off the heat and leave to cool in the pan, then drain season with lots of s and p and serve with salad/toast/new potaoes with a dollop of mayo and a drop of salad cream,hmmm tasty, I had hotsmoked salmon for my tea, my neighbour had a side of it in her freezer and as she lives on her own it went a begging to us and very good it was too ( salar hot smoked is wonderful stuff!!!)
