    I very often poach salmon. Place salmon in a pot big enough to allow it to sit flat. Cover with cold water, put in a bay leaf and some chopped onion, herbs to taste ( fennel, dill, thyme) if you have them and bring to boil slowly, covered. Turn off heat and leave to sit in water until your accompaniments are ready...peas and mash quick and tasty.

    You should also add salt to taste to poaching water.

    Hi there

    thai salmon

    1 thinly sliced red onion,but you can always use normal
    1oz soft darkbrown sugar
    a clove choped garlic
    1/2" piece of fresh ginger, cut into thin matchsticks
    1tbs fish sauce
    throw it all in a small pan and cook over a low heat until sugar has dissolved

    place your salmon on a square of foil and pull up the sides, then spoon the mix over and wrap up tightly...you then you wang it in the oven for about 10mins -depending on thickness of fish.....

    it sounds an odd concotion but it is stunning as the creamy salmon works with the strong flavours..particularly good if your not a fish fan .... i have it with noodles or stirfry.....and if you wait for the mix to cool in the pan you can make the parcel up and stick it in the fridge the night before so you have nothing to do when you get in from work..which has to be a bonus:T ... oh and the ginger that is left can just be thrown in the freezer for another day:D

    I make a dish I call Kedgeree (but it's only my interpretation of it - it's probably a very long way from REAL Kedgeree!!!)

    Fry an onion with a little mild curry paste, then add the whole salmon fillets and allow to cook until not quite done (ie until they're slightly less cooked than you'd be happy eating them). Remove from the heat - the salmon will continue to cook in the heat of the pan as you ...

    Flake the salmon into the onion, add cooked rice (I sometimes add frozen peas to the rice whilst it's cooking too) and stir well to coat in the curry flavours. Serve in big bowls with quartered boiled eggs lightly mixed in.

    Use a fairly 'standard' curry paste (rather than tikka or madras) and add as much or as little as you fancy.

    It's yummy served with pitta / naan etc for dunking, although it shouldnt end up being a very saucy dish :o:p

  • The following recipe came from a Slimming World magazine at some point and is my fave way to do salmon, it is just gorgeous
    Salmon with chilli and coriander mash

    Serves 4

    6 tbs dark soy sauce
    2 tsp ground ginger
    2 tsp clear honey
    Seasoning
    4 x 2oz skinned salmon fillets
    2lb potatoes
    200g v low fat fromage frais
    1 garlic clove
    6 spring onions
    2 red chillies
    A large handful of fresh coriander

    Make marinade by combining soy, ginger and honey and season well. Place salmon in shallow dish and cover with marinade and leave to stand 10 mins.

    Peel and chop potatoes and boil for 12-15 mins until tender, drain and mash with fromage frais. Crush garlic, trim and slice spring onions, deseed and finely chop chillies and finely chop coriander. Stir all into mash and season to taste.

    Meanwhile grill salmon for 12-15 mins or until cooked through and serve with mash.

    Syns on green ½ Add 5 if not using salmon as HE

    I use the microwave. Salmon on plate with a little water and lemon juice, another pate over the top. microwave for a couple of minutes or untilit's done

    i just put it on some foil, squeeze some lemon and grind some pepper on, leave the lemon bit on top of it then wrap it up in a loose parcel with the foil and cook in the oven for about 10 mins.

    Hi

    I have had some salmon steaks sitting in my freezer for a few months now and was just feeling the urge to chuck them in the bin....reasons...

    My two boys aren't particularly keen on it, and dh found, that when I last made it with some lovely new pots and green beans, it didn't fill him up very much. This is why I haven't used it up yet.

    Before I throw it away which I do not want to do, but it is using up valuable freezer space. Can anyone think of any ideas of a meal that might be a bit more substantial and where it is possibly not so salmon prominent...

    Gosh i'm not asking for much am I:o

    Steam them and leave to cool. Flake them up and mix with mashed potato, chopped chilli, chopped coriander leaves, pinch of ground cumin, pinch of ground coriander, shredded lime leaves if you have them or grate a bit of lime rind and make shape into fish cakes. Put infridge to firm up and then either fry or brush with oil and grill. I love these!

    Or use as an ingredient in fish pie with maybe some smoked haddock and prawns?
