Oooooh I love the fishcake or fish pie idea...I can't make quiche:o
For the fishcakes could I use dried herbs as I have these in?

Boil up some fesh tagliettelie (sp) or dry spagetti and gently fry salmon while that's cooking. When cooled flake into large chunks. Mix with the drained spag then pour over a mix of lemon juice (rind if you like), splash of cream and a couple of tablespoons of humous. I like to use the lemon and coriander one for an extra kick.MFiT Member No 85

A friend gave me this for lunch and it is divine!
KOULIBIAC
75g long grained rice
60g butter
1large onion chopped
1 400g can chopped tomatoes
500g cold cooked flaked salmon
2 tbsp chopped parsley
grated zest & juice of 1 lemon
pack rolled puff pastry
1 egg beaten
60g butter & juice of ½ lemon to serve
lemon twists & garnish
cook, cool & refrigerate the rice
melt butter & fry onion gently till soft. Add the tomatoes, cook for 15 mins. Cool
mix salmon, rice tomato mixture, parsley, lemon zest & juice, salt & pepper to taste.
Put the mix down the centre of the pastry. Brush the edges of pastry with a beaten egg. Put over short edges, brush with egg. Fold over the long edges.
Put fold side down in a baking dish, make pattern on top – hole – long s shape both ends. Brush with egg. Refrigerate till ready to cook – overnight is ok.
Cook 220 degs gas 7 for 30 – 40 minutes.
Melt butter & mix with lemon juice. Pour through the holes in the top garnish & serve with salad.

Or - how about HM fish fingers - cut into chunky finger shapes, coat with breadcrumbs or oats and shallow fry. My kids like these but aren't keen on salmon on it's own.Up Jacob's Creek without a paddle!0 -
Foundation recipe for quiche.
Foundation recipe for savory custard.
1 tablespoon cornflour, 2 eggs, 175g can evaporated milk, salt and pepper to taste, pinch of nutmeg.
Place cornflour in a bowl add the milk slowly whisking then add eggs and seasonings and whisk together until smooth. Alternatively blend all ingredients together. The custard is now ready to use with filling of your choice.
Line a small flan dish with either bought or made shortcrust pastry. Put on filling of choice. e.g. salmon and broccoli, mushroom, italian vegtable bacon and cheese. Pour over basic foundation savory custard. Sprinkle top with cheese if liked. Herbs and spices to taste can also be added to basic foundation savory custard. Bake in middle of oven at gas 4, 350 degrees far. or 180 degrees centigrade for about 15 minutes although time will vary according to fillings so just bake until golden and puffed but firm to the touch.

We went to Frankie & Benny's yesterday for a treat, and I had their salmon fishcakes. They were made of salmon, chopped red pepper and mozarella cheese, covered in breadcrumbs. They were delicious! Decided to try it myself next time I need inspiration!I Believe in saving money!!!:T

Defintely fish pie. We usually put a chopped up egg in ours too. It's delicious made with salmon. You could also put a bit of cheese in the sauce to disguise the fish a bit more.0
