This is my favorite salmon recipe.

I do agree with everying #14/rbothell wrote though, but then I saw them catching wild salmon in Canada. When caught they were placed on the grass and allowed to die naturally which took about 4 hours - not nice to see at all. We asked why they didn't just hit them or kill them quickly. He said dying slowly improved the flavour of the meat.

Here is a recipe Im going to try today. Looks tasty.
Salmon and Broccoli and Potato Bake
750g Medium potatoes cut into wedges
1 head broccoli, trimmed and broken into florets
200ml tub creme fraiche
2 tsp wholegrain mustard
2 large or 4 small salmon fillets, cut into large pieces
handful grated parmesan
Cook potato in lightly salted water until almost tender. Add the broccoli and continue cooking until the florets are also tender. Heat the grill to medium. Mix creme fraiche and mustard together with a little seasoning. Place the potatoes and broccoli in a shallow baking dish and place the salmon over this. Spoon over the creme fraiche mix, making sure the broccoli is covered. Sprinkle with the cheese and grill until the sauce is bubbling and the salmon is cooked.0 -
Hi lindens,
There is a recent thread on what to do with salmon steaks so I've added your thread to it to keep all the replies together.

There might be an idea or two that you can use or adapt in these threads...
- Salmon, tuna... others?
- Salvage a salmon
- Sardine burgers
- Smoked salmon in main course

I'm doing a large family dinner tonight for the in-laws and was planning to do salmon fillets topped with pesto and crumbs. Nice and easy, looks a wee bit impressive and fuss free.
Sent OH shopping and he came home with tail fillets as they were on offer! Can't fault his MSE skills but does anyone have any ideas of what I can do with them? Would prefer to do something simple in the oven but open to ideas.
Can I put less Pesto on top and put some inside - they're long so can fold in 3 so will be manageable size. Thanks, not used to trying to impress the in-laws!0 -
I cannot see a reason why you cannot do exactly the same as you were going too, but just spread it a bit thinner as it has a larger surface.

Why is it I have less time now I am retired then when I worked?0 -
I just think they won't look as good as they are quite thin. Will also be harder to find space in oven for them as they will take up 2 trays/shelves.0
