    I grill a couple of salmon steaks, at the same time cook some fresh spagetti, flake the salmon into the pasta, mix in hollandaise sauce, grate some parmasan over the top, and eat, a very quick but delicious meal.

    On a plate covered in the juice of one orange & the zest of half & a large pinch of fresh or dried corriander. Cover with cling film & microwave for about 1 min or until done. Fab served with cous-cous made with the juice & zest of one lemon, a pinch of corriander & a small handfull of sultanas;) Really easy, really really fast & next to no washing up (especially if you add the made cous-cous to the microwave plate!)

    I like to wrap salmon in parma ham, drizzle with olive oil and cook in oven for about 20 mins you could have it with salad or potatoes and veg

    I like grilled, smothered in lemon juice, on a bed of pesto pasta.

    Or en-croute, with cream cheese spread on top, squirt of lime or lemon (especially nice with black pepper low fat cream cheese) x

    Hopefully someone can help by answering a couple of questions for me.

    I have bought some salmon fillets from the supermarket but wont eat both of them before they go out of date.

    Is it possible to cook them and then freeze them? or would it be better the freeze them raw? :confused:

    When i cook them, how many days would they be ok for in the fridge?

    Defo freeze them raw... as long as you let them defrost naturally in their own juices they're almost as good as fresh
