    Steam some aspargus broken into inch pieces over the pasta
    in a seperate pan heat flakes of salmon in a tin of condensed or home made aspargus soup
    Add the cooked asparagus to the sauce & pour over the pasta (or stir in)

    actually much cheaper than it sounds & really delish for a treat but can be quite rich - so serve with some crust homemade bread!

    A really nice one is teriyaki salmon - make a mix of sesame oil, brown sugar and soy sauce - marinate the salmon in this and then fry or grill - add any extra sauce to the pan to caremelise - yum!

    Thai salmon fishcakes. Mix cooked flaked salmon, thai green curry paste and mashed potato together in a fairly stiff mix - then shape into cakes, turn in flour and chill for about an hour, then fry or bake - delicious.

    Hi, Ive just got back from tesco and have bought 2 pieces of salmon....going to cook one piece for my son (no one else eats fish) and the date goes on the other in 2 days.....i just read that it is not suitable for freezing!!....I could just give him salmon again tomorrow but would rather save it for next week.

    Wondering if anyone knows if i can cook it and then freeze it?? or make it into something else?? maybe fishcakes? I have tinned tuna and also a packet of smoked salmon that needs using up. Its only my son who eats fish so anything made would have to be individual portions and ideally suitable for freezing.

    Any ideas?

    If its a solid piece of fish its freezable - I pay no attention to things which claim they can't be frozen! (except lettuce :rotfl:)

    If it's been frozen by the store I wouldn't refreeze it. You could poach and flake it and then frezze to be used for fishcakes some other time.

    Haribojunkie - thanks - as she said she'd just got back I presumed it was fresh - but don't refreeze anything that's been thawed without cooking it first!

    Haribo is right - this usually means that it was already frozen by the shop so i would be careful (esp as for your son).

    poaching would probably be the best way to cook it and then it could be frozen by itself or in fishcakes, or a fish pie (just a white sauce with some peas and the salmon topped with mashed potato).

    I didn't think of the shop defrosting it - but again its never hurt me! I always overcook things though :confused:

    thanks, yeah the label says it has already been frozen so thats why I cant freeze it....Wasnt sure if once it had been cooked it would then be fine, like the ideal of making fish cakes.....if i poach the salmon then mix it with mash potato and some tuna and a bit of salt and pepper will it then be suitable for freezing? and how do i go about cooking them when they come out?

    sorry hope these dont seem like stupid questions I dont eat fish so have no idea of cooking it, would just really like to start cooking more for my son, thanks

    i like to wrap mine in greasproof(make like a cornish pastie wrap)
    and putting in herbs,lemon,olive oil(or butter if clories dont matter) etc and bake it.
    im not a huge fish fan but this way gets loads of flavours and keeps all the nutrients in,plus less washing up
