I have some of these coming in tonight's shopping, but I don't have a clue what to do with them. I have to do something amazing, as bf usually refuses to eat fish, but has agreed to "give it a go." have a look at BBC Lifestyle Food pages. You can do a recipe search with whatever ingreidents you have.
A simple way of cooking them is to bake them in a foil or greaseproof paper parcel with onion, or fennel, or herbs and a bit of white wine.Cats don't have owners - they have staff!!DFW Long Hauler Supporter No 1500 -
I do a salmon en croute with pureed roasted red pepper.
You need:
2 salmon fillets
2-4 roasted peppers (I use the Lidl red peppers in oil)
A little parmesan (optional)
puff pastry (buy some or make your own easily)
sesame seeds (optional).
Place the roasted peppers, with a little of the oil, in a blender and mash up.
Roll pastry out into portions bug enough to go under and wrap over the salmon (with a little to spare).
Lay salmon on pastry, coat well with the pepper puree.
Fold pastry over (using a little milk/egg white to seal if need be).
Sprinkly sesame seeds and/or parmesan on top.
Bake for approx 20 mins in a warm oven (200/fan 180/not sure what gas this is!).
Yum- I find it being en croute stops it drying out.
I serve with pots and green beans or cous cous and veg.
You could also make fish cakes (some recipes must be on here!) or grill simply with salt and pepper and a little lemon or lime juice.

Help!!!
I got a large piece of Salmon from Costco, cut it into portions and froze them. Have got some out of the freezer this morning to defrost and they have gone a funny colour on the bottom of each fillet - do you think they are safe to eat??? Is it possible they have freexer burn??

Hello,
Can anyne advise, I have got the lurgy (well a bad cold probably) but need to cook two salmon fillets tonight. I need something easy and not faffy but delicious, preferably a bung it all in an oven tray and cook type thing - any bright ideas?

Mix 2 tbsp of soy sauce with 2 tbsp of honey, brush on the fillets and bake for about 10 mins. Serve with rice and veg.0

Cook in oven on about Gas 5 for 10 minutes (depending on thickness / size could be longer) and serve on a boiled of rice (Wild and long grain is nice if you have it) and spoon over some salsa. Serve with a salad mmmmmmmmmm!0

thanks folks I think I will go with the honey and soy sauce one as I have the ingredients in - no salsa unless I can be bothered to make some, but I cant!
