    Hi all, first post on this particular forum.

    We got some salmon fillets yesterday,I'll cook 'em tonight.

    To get some real nice flavour on them is it best to to season well add some herbs,butter, cover in foil and slam in the oven?
    My mums friend suggested this idea I was wondering if there are any other techniques anyone has.

    That's how I cook them - lay them skin side down on a sheet of foil, top with a teaspoon of butter, herbs like parsley/tarragon/dill, salt & pepper and perhaps a tbsp of white wine if you have it. Bring the sides of the foil up and scrunch them together to make a parcel, then ovenbake at 180c for 15-20 minutes or until opaque in the middle. Lovely!

    Spread with cream cheese and fresh herbs and wrap in puff pastry. Bake until golden :D

    Went with liz545 suggestion, esp with adding the white wine.
    Turned out a treat, the missus loved it.

    I have some salmon fillets for tea tonight. I usually just put them in the oven with a little oil in foil and then serve them with salad but I was thinking of trying something more exciting :cool:

    Any ideas?

    How about grilling or frying it, with a ginger and soy marinade? Then serve it with rice and steamed chinese greens (with a little ginger and soy, or oyster sauce over them) Grilling is nice if you have skin so it goes all crispy

    I sometimes do salmon, just coked in the oven then add to some straight to wok noodles with some sweet chilli sauce mixed in, yum. You could add some veg too withthe noodles.

    bit naughty - but we wrap them in parma ham, cover in lemon juice, bake for 20 mins at gas mark 5, and eat with lashings of sour cream and new potatoes. We love it!

    Or basil pesto. Squeeze loads of lemon juice on them, spread some basil pesto and grill them. Lovely ;)

    My current salmon fillet favourite is...

    - cook some linguine, tagliatelle or spaghetti

    Meanwhile,

    Barely cover the base of a saucepan with water (or white wine - yum!) and bring to the boil. Put in the salmon and poach for 3 mins approx. Take out the salmon and cover. Add some frozen peas (about 2 TBSP per person) and cook for 2 mins. Flake the salmon into the peas and stir in a little creme fraiche. Add a squeeze of lemon juice.

    When the pasta has cooked toss in the salmon & serve.
