I usually do them very simply just pan fried in a bit of butter or ghee (clarified butter). The skin goes crispy and is nice with fresh lemon juice squeezed over them. Serve with new potatoes and veg of your choice - something strongly flavoured like stir-fried veg with ginger, chilli and soy sauce is good!
This works best with fresher fillets, though it is fine with frozen too! If the salmon is very fresh, you can under cook it slightly so you get the full flavour of the fish itself, but cook it well for less fresh salmon.Trust me - I'm NOT a doctor!0 -
Leave in splash of soy sauce, splash of mirin/shao sing rice wine/white wine/sherry/whatever and dash of oil/pinch of sugar. Allow to reach room temperature whilst preparing rice/noodles/salad veggies. Lift out and salmon should be slightly firmer.
Heat pan to screaming hot. Make sure windows are open.
Add to pan. Don't touch it.
When cooked side reaches half way up fillet, turn off gas, add remainder of marinade and leave whilst you sort out rice/noodles whatever you are having with it.

Using up stuff from the freezer. I have a bag of salmon fillets, which I normally either just bake (in foil), or do with creme Fraiche and pasta type thingy.
I know I can put some in fish pie, but actually don't like it with too much salmon in it, and we had fish pie less than a week ago.
So anyone got any other ideas for nice comforting warming recipes, using salmon ?I try not to get too stressed out on the forum. I won't argue, i'll just leave a thread if you don't like what I say.0 -
Use it with the pasta in a creme fraiche and white wine pasta sauce. God l'm hungry! x

Try putting salmon into the search box on the BBC Good Food website, they have loads of good recipes. I use it whenever I have a main ingredient (ie. salmon fillets) that I want to do something new with0

How about searing them off, and then popping them in an oven dish, pour a nice, herby tomato sauce over the top (simple enough to make yourself; tin of tomatoes, some garlic, a little sliced onion, rosemary and oregano - or any herbs you prefer - and salt and pepper all cooked up together and reduced a little) and top with maybe some breadcrumbs and a little grated cheese on top, then put in the oven to bake for about half an hour at gas 7; always makes a nice dinner, does that - serve with a few spuds and some veg, job's a good'un0
