My current salmon fillet favourite is...
- cook some linguine, tagliatelle or spaghetti
Meanwhile,
Barely cover the base of a saucepan with water (or white wine - yum!) and bring to the boil. Put in the salmon and poach for 3 mins approx. Take out the salmon and cover. Add some frozen peas (about 2 TBSP per person) and cook for 2 mins. Flake the salmon into the peas and stir in a little creme fraiche. Add a squeeze of lemon juice.
When the pasta has cooked toss in the salmon & serve.

What about mixing some runny honey with some mild mustard, brushing it on the salmon and baking?0 -
Not in season yet, but butter sauce flavoured with Seville orange is delicious
You can use sweet orange and lemon juice instead.
As this has fallen from the front page of OS, I'll add it to the exisitng salmon fillet thread to give you more ideas

In the summer i eat lots of salmon fillets just with new potatoes and some hollandaise sauce and brocolli (or asparagus when I can afford that)
I've got loads of salmon in the freezer but I'm out of ideas what to have with it. I know I could get some small potatoes and boil those to have with it but I want to try something different..
Any suggestions? What do you have with salmon in the autumn and winter? I need to be fairly strict with the budget though...0 -

Cabbage? If it's red then I like cooking it with a splash of cranberry juice.
Also both kinds of cabbage are really nice stir fried quickly with a bit of chilli (dried chilli flakes are also nice)
I mostly fry my salmon teriyaki style - mix 2tbsp soy sauce, 1 tsp sugar, and 1tbsp sherry or chinese cooking wine, marinate the salmon for however long it takes to drink a G&T;) fry briefly on each side and serve with rice and veggies.0 -
