could you make some sort of pasta bake?
Poach off the salmon so it flakes, add a bit of lemon salt and pepper to the water (if no lemon dont worry - same with dried herbs)
flake it onto some pasta, sprinkle of cheese? maybe add sweated onion?
    Or a quiche with salad?

Make up pasta in your favourite sauce, flake some of the salmon onto the top of each portion and serve with salad. That's what we had on Sunday but I tried a new sauce and it was yukky....the salmon was good though!

Could you use it to make a fish pie.....ingredients of mine are salmon (and other fish if you have it, but fine if you don't) hard boiled eggs, peas, cheese sauce and mash to top it.

    Aww, thanks all X

Heres where it gets tough, hubby doesn't eat pasta (I know, im rolling my eyes too)
    So no pasta bakes ::(

Ive got spuds, veg like broad beads, runner beans, peas, carrots.
Ive got cheese, ive got various herbs (including fresh chives)

I could do fish pie...but hubby has raised his eyes at this before.... the only thing swaying me to this is we have to eat before he gets home, so i have to be able to reheat his.

Arrgghh, thanks all though really appreciate it :D

    This is my recipe:

    Ingredients:

Any fish ( I used a combination of white fish/salmon/prawns or whatever I have)
    Milk
    Grated cheese
    Hard boiled egg
    Frozen peas
    Mashed potatoes

    Method

    Poach fish in milk
Remove fish and arrange in a deepish serving dish
Add quartered hard boiled eggs and frozen peas to the dish
Use the milk (that the fish was poached in) to make a white sauce
Add grated cheese and black pepper to the sauce and pour over the fish/eggs/peas
    Top with mashed potato

Pop into a hot oven for 20 mins or until the potato is golden

If he's not keen on fish pie, would he eat a salmon quiche?

Fish pie with veg on the side sounds lovely. Here's a recipe that uses hard boiled eggs:

1 Simplest suggestion is to oven bake the Salmon topped with knob of butter and mixed herbs wraped loosely in foil 'bag' so it steams, serve with boiled potatoes and make a cheese sauce or white sauce

2 Salmon and cheesy mashed potato and veg

3 maybe make a pocket in the salmon and stuff with cheese.

4 If you have ingredients to make pastry wrap the salmon in pastry to make salmon en crout

5 or what about salmon sandwich or fish burger with cheesy chips?

Not ideal to reheat salmon as it doesnt taste as fresh in my opinion. Alternatively ask hubby to cook as he is so fussy! ;) lol x

Just a few ideas for you.

    Good luck!

    Thanks so much all!
Going to go with the fish pie (thanks Pink-winged)
Some wonderful ideas there 'Crisp' - not enough salmon to have a piece each hence it has to be something padded out with other things.

Will let you know how it goes...thank EVERYONE, I knew I could get the answer here :T:D
