    I would cook whichever dish you like the sound of best! If your OH isn't doing the cooking, they shouldn't have so many demands about what you should cook! :D

    Salmon kebabs - chop the fillets up, you can alternate with new potatoes / tomatoes on a stick, drizzle in olive oil, black pepper and bake in oven

    I bought 4 reduced salmon fillets and then in a hurry chucked them all in the freezer.

    However I have now had to defrost all 4 and only need 2. What could I do with the other 2? I'm going to have to cook it tonight though as I don't want to leave them until tomorrow as they were right on the used by date.

  • get cooking with either a fish pie or fishcakes, both of which will freeze well once cooked, or be fine in the fridge for a couple of days... Or if you have any pastry lying around, make a salmon en croute, cook, store in fridge and reheat in the oven before serving for tomorrow's dinner...
    Having fun trying to save money without going over the top and living on budget food all the time...

    Perhaps in a pasta sauce with cream/ cream cheese etc and some veg.

    Now do you use cooked or raw salmon? Off to google some recipes.

    I just use tinned salmon and thats already cooked, so I would say use cooked.

    Cook it up tonight, then tomorrow, combine it with mash potato, an egg, salt, pepper and a big squirt of lemon juice, some of your favourite herb ( i like parsley in fish dishes). Shape into balls, squash a little and fry in an oil/butter mix :D
    (beat the egg before you add it, and add it bit by bit so you don't get a sloppy mix)

    You could coat them in egg and breadcrumbs if you wanted but I don't usually bother.
  • duh..... how about poaching the salmon on its own tonight, then having cold salmon tomorrow, or turning them into something else at the weekend... if it's cooked tonight, then it'll keep in the fridge (or possibly freezer) for a little while, giving you time to turn into the best salmon dish you can find... :)
