thanks for that, will put it in freezer when i get back tonight.
want to cook one of them though, if i only eat half, how long will the other half last in the fridge if it has already been cooked?

I always freeze raw salmon then just let it defrost overnight in the fridge. I got a fantastic bargain the other day from tesco. The whole salmons were reduced from £5.99 per kilo to £2.99 per kilo so I asked for one to be filleted for me. He weighed it first - it cost £12 something, then took about 5 mins filleting it. When he went to put the price sticker on he couldn't find it so had to weigh it again without head, bones, scraps etc (I said I didn't want them as I don't really use fish for stock). Instead of it being £12 odd it was £7.46. I was so chuffed, as when i got it home to split into bags for the freezer there were 24 fillets! For £7.46!0

My OH 'invented' a new way for us to eat salmon - mix some parmasan and pesto together and smother on top. Very very nice it is0

This Thai Pumpkin and Seafood Curry by Nigella is one of my favourites - so morish! You can do it all just Salmon, you don't need to add the prawns and it's easy to cook for less or more people too.

Herbie topped salmon - Mix some breadcrumbs with either chopped fresh or dried herbs, add about two tablespoons of butter to bind. Put on top of salmon steaks and pop in oven for 20 minutes - easy and delicious.
Or, Salmon in white wine with lemon - wrap a piece of salmon, in tin foil, adding a dash of white wine, sprinkle of chopper herbs and slice of lemon, salt and pepper. Cook in oven for 20-30 minutes until cooked. Can also be done on bbq or omit the foil and use a microwave proof dish and lid - cook for 2 minutes.
Or, Salmon encroute - make up thick bechamel sauce, add rind of lemon and black pepper. Allow to cook. Meanwhile wilt some spinach in the microwave with a little water adn allow to cool. Roll out some ready made pastry (or HM if you have the patience) place a steak in the centre and top with some lemon sauce and spinach and seal around the edges like a pasty and bake for 30-40 minutes (or freeze for later, provided the other ingredients are cold, you can use a frozen salmon steak and pop the whole thing straight back in the freezer).Thanks to MSE, I am mortgage free!

We have quick and easy salmon pie.
Gently poach salmon in milk with a little salt and pepper. Make up a white sauce, with the poaching milk, and add some cheese and break the salmon roughly into it. Top with mashed potato and grill. Serve with steamed broccoli and french beans. Takes about twenty minutes and is fabulous!!0 -
