Thanks for looking fletch - I can't search properly as I don't have a proper pc. Recipe sounds lovely. Can't do this evening though as FIL likes his traditional potatos and veg. Will try it out on OH in a few weeks - sounds like his thing. And mine!0

To be honest, I'd just do the recipe you originally planned. I think the tail has more flavour.
Cut them half and put one half on top of the other. You can do this before you cook them - or after, if you're concerned that they won't cook through. But they will .......Warning ..... I'm a peri-menopausal axe-wielding maniac0 -
Thanks everyone. Going to stop worrying now and go with my original plan albeit slightly amended. If anyone (ie FIL) says anything about the thickness I'll just say we bought the gourmet part of the fillet as it's tastier!0

Salmon was 1/2 price at Mr T so I bought a whole one which they filleted forme. My freezer is full of the stuff but I am a bit limited on ideas for recipes. I am fed up with salmon and veg. Any ideas please?Started comping February 2012

salmon, steamed with a little soy sauce drizzle don topp, served with steamed bok/pak choi and rice
baked salmon with a crust on top (loke the philly ad)

I like to make a marinade of equal parts light soy sauce and maple syrup (I usually use a couple of tablespoonfuls of each, for two of us), a squeeze of lime juice, and some finely chopped red chilli, garlic and fresh ginger. Leave the salmon in this for an hour or so, then bake. It's really good, served with steamed green vegetables and rice.
I also love it just baked with butter, salt and pepper and served with hollandaise sauce ... Or you could try fishcakes, there are loads of recipes online and the ones you make with a thick bechamel are lovely. Or a fish pie would be nice, or you could top the salmon with boursin or something similar, and wrap in puff pastry for a quick salmon en croute.0 -

I tend to make Salmon Fishcakes, Salmon Pie, Salmon Quiche or Salmon en croute
