Could I substitute anything for the dill as I forgot to get some when I was in tesco earlier. If you want something simple, place each fillet on foil with a knob of butter and a slice of lemon. Bring the sides of the foil up and scruch the top up ao it is like a little bag. Cook in the oven, probably about 20mins on gas 5 (don't know the electric). Serve with a salad or whatever else you fancy. Also nice cooked with some dill if you prefer.0

This is one of my fav's ....
Chop up some pine nuts ... they're expensive but you only need a table spoon full for each fillet ... quite chunky
Chop up some Basil or Coriander .. or add a spoon Pesto if you have none of these ... or at a push ... a liitle olive oil
A squeeze or squirt of Lemon Juice
Mix round in a bowl
Lay (defrosted) salmon on oiled baking tray/dish or greased paper on same .. it will stop it making a mess of your dish as Salmon quite 'oily'
With a spoon and a little help from you fingers ... spread mixture on top of Salmon ... forming a 'crust ' of about 1cm ... it will fall off a bit but just help it back on and press down with your fingers ...
Bake in oven for about 20 to 25 Minutes depending on how thick your fillet ... when cooked pine nuts should be lightly toasted on top ...
Serve with cous cous mixed with a little lemon juice ... to compliment ... and olive oil or butter
or rice ... or pasta ... or whatever!

I try to get fish down my lot at least twice a week, but found they struggled to finish a fillet 'whole'. So I created a dish as follows, and now they wolf it down:
Ingredients: Potatoes, fish (salmon and/or anyfirm white fish), broccoli, tub of creme fraiche, cheese
Peel and cut potatoes into generous bite-size cubes. Boil carefully till nearly cooked (don't let them disintegrate).
Prepare broccoli into smallish florets, and steam/cook till tender.
Meanwhile cut fish up into bite-size cubes.
When your veg are ready, scatter the fish cubes into a shallow pyrex dish, then scatter the potatoes and broccoli over/among the fish.
Add a splash of olive oil, S and P, and then dollop the creme fraiche around the pan (it doesn't coat everything).
Grate cheese on top, and slam in a fairly hot oven (200) for around 10-15 mins, until all is bubbling.
Serve and enjoy!:j
This can become quite economical if you just up the amount of potato to fish, and you can also add other vegetables, eg carrot batons etc, which I find encourages them to eat these as well!!Taking control, slowly.:rotfl: :rotfl:0 -

Hi yep we eat it with veggies for some reason I really love green veggies with fish! Usually have some spuds and love new baby ones whenin season!
I buy Tesco's pack of 8 (or is it 10) salmon fillets because they have no skin on which I prefer. I put them in the freeezer as they don't take long to defroast and proscuittio lasts ages (ie bought pack this week and it expires in Dec).

My first ever job was in a fish shop, and Derek the owner bless him, gave me one piece of advice on how to cook salmon. It has helped me impress a few with the cooking skills. The advice is don't overcook fish.
For poached salmon was make up a stock (onions, veg stock cube peppercorns, salt, wine and bay leaf is an easy one, but you can play around) bring it to the boil and simmer for ten minutes, to let the flavours mingle.
gentley lower the salmon fillets in, bring back to the boil and simmer for two minutes.
Turn off the heat, and leave the fillets in the hot water for ten minutes. The residual heat in the water will cook the fish.
goes great with new potatoes and brocolli. Avoid rice. the textures don't marry.
If it sounds a little dry, a simple cheese sauce, or tomato sauce will fix that.

Oh, just thought of one the kids will like, home made fishcakes.
Cook the salmon as above, make some mashed potato.
add some salt, pepper and chopped spring onions, and mix.
flake the salmon fillets aprt, and carefully add to the mash mix (if you add the fish and mash it up, it looks pretty awful.
Make into a patty, coat with flour, dip in an egg, and coat with breadcrumbs. #

Sorry for not getting back to you FTM. I think I logged off just after I posted last week. Hope you found a substitute for the dill. I suppose you could use any herb that isn't overwhelming in smell or taste.
Personally, I don't particularly like dill but still use it in small quantities when I'm cooking trout or salmon as it does seem to bring out the flavour a bit more. So, a small jar of dried dill may serve you well over quite a long time.
Please let me know how you get on using the recipes I gave (PM me if you like). Its great to be able to give someone else a great recipe that works.
