Has anyone any suggestions for using up my supply of tinned salmon. (Bought when very cheap!!)
I have done fishcakes, I love salmon sannies and also used it for salads (not that I fancy a salad on this horible day!!).
I have tried a search and nothing came up . (Just in case squeakiy comes in and says look at the index!!!) .

Salmon Loaf
16 oz. can salmon
1 c. milk
2 eggs
2 T. onions, chopped
1 c. cracker crumbs
2 tsp. lemon juice
1 tsp. dill (opt)
Salt and pepper
Flake salmon. Beat eggs and milk together. Combine all ingredients. Place in greased loaf pan and bake 1 hour at 350.

Large tin salmon
Chopped onion
Potatoes peeled & thinly sliced
Tin celery or mushroom soup
Grease a casserole dish & layer 1st 3 ingredients starting & finishing with potatoes.
Pour over can of soup & pop in the oven 200c (not sure about gas but that's 'moderate' until the potatoes are cooked through & brown on top.
This can be done in the slow cooker too.0 -

Salmon Plait :
Roll out rectangle of puff pastry to a bit smaller than a baking sheet & very lightly score longways into thirds. On the 2 outer thirds cut at an angle from the score line to the outside edge but leave attached at the score line, so that you get lots of attached diagonal lengths (hope you understand this?).
layer along the middle third a mix of salmon, chopped hard boiled eggs & chopped spring onion. You can vary this by adding a couple of spoonfuls of white sauce/peppercorn sauce/curry powder/chopped red onion/steamed leaks/a layer of spinich.
Fold over the attached lengths in turns so that they form a plait on top. (this probably doesn't make much sense, but if you do it you'll soon see what I mean). Brush with beaten egg & bake in a medium oven for approx 25 mins until pastry is golden.
Delicious served hot or cold & can be frozen after cooking but do not re-heat a 2nd time.
For a cheap version substitute salmon with tuna;)Post Natal Depression is the worst part of giving birth:p

tinned salmon - YUK! Get fresh next time, and in the mean time make pasta sauce, pasta bake, thai fishcakes, salmon in puff pastry.Member no.1 of the 'I'm not in a clique' group :rotfl:

creme fraiche
courgettes (as many as you like)
pasta
pepper
parmesan
Grate courgettes or slice them VERY thinly, saute gently in a bit of olive oil. Cook pasta in the meantime, usual method. When courgettes are soft and possibly a bit golden round the edges, add tinned salmon and a good dollop of creme fraiche or double cream to make a lumpy sauce, and add freshly ground pepper. Heat through, add to pasta, mix it all together and grate lots of fresh parmesan over the top. This is our "storecupboard favourite" when we've got lots of courgettes from the organic veg man. It looks very pretty too - pink and green. Even the kids eat bucketloads of this.Before you criticise a man, walk a mile in his shoes. I make a fish pie and use salmon or tuna.
Potatoes(about 2 lbs)
onions
a can of mushroom soup(condebsed if poss)2 cans of salmon or one of salmon and one of tuna
salt and pepper.
Any leftover cream

If you can get hold of 'liquid smoke' (its a natural product but often overpriced over here) and would have enough use for it you could whizz up the salmon with cream cheese and a few drops to taste. Stick a bit of real smoked salmon sliced finr if feeling posh. Very tasty, I think.0
