  • Fishcakes are a great idea.

    You can also mash it with vinegar and spring onions and use as a sandwich filling.

    I would also mix it with a white sauce and some cooked penne, put into a dish, sprinkle with cheese and bake in a hot oven for 15 minutes.

  • Salmon pasta - make a cheese sauce, add drained, tinned salmon, and drained tinned sweetcorn. Season and pour over pasta. It's a great storecupboard standby.

  • Nooooo, don't give it to the cats. make a lovely salmon quiche:D

    Fry 2oz mushrooms and one small onion until soft. Drain the salmon (usually a 7 1/2 oz tin) and mash. Into a prepared pastry case spread the onions and mushrooms. Top with the salmon. Beat one egg with a quarter pint of milk and 2 oz cheese, then season with salt and pepper. Pour over the salmon, onions and mushrooms. Bake at gas 6 for 25-30 mins until firmly set. Eat hot or cold. Delicious:D

  • Salmon Pie

    I'm afraid quantities aren't exact as I it's something my Mum used to make and I never got the chance to ask her for the recipe so I just guesstimate.


    Blind baked (ie cooked without filling) short crust pastry in a large flan dish

    2x small tins of salmon
    one smallish onion
    grated cheese (as much as you want, but I like lots)
    2 small eggs
    a couple of tablespoons of double cream (not necessary but makes it richer)
    black pepper

    Combine the salmon, onion, cheese and egg with a wooden spoon and put the mixture into the blind baked pastry in the flan dish.

    Pop into the oven (180 degrees) until it begins to colour on top.

    Serve hot or leave to cool.

    Recipe for a delicious dip.

    8 oz cream cheese
    2 tablespoons Sour cream
    1 tablespoon lemon juice
    3 spring onions chopped finely
    14 oz can red salmon, drained and flaked (remove any bones )
    1 teaspoon fresh ground pepper
    1 oz pecan nuts finely chopped ( or walnuts if you can't get pecans)
    1 oz fresh chives chopped finely, must be fresh not dried.

    Beat the cream cheese, sour cream and lemon juice in a bowl until smooth. Stir in the spring onions, salmon, pepper, pecan nuts and chives. Refrigerate for a few hours before serving with melba toast or crackers. It is delicious as a starter or just a snack.

    Salmon and Pesto Pasta Bake (Makes 6 Portions) (56p per portion)

    (67p) 1 Tin Salmon
    (13p) 1 onion (Diced)
    (3p) 1 clove garlic
    (4p) ½ tsp dried dill
    (£1.54) 1 jar green pesto
    (65p) 500g Pasta.
    (30p) Cheese (grated) to top it.

    Cook the pasta according instructions
    Fry the onions and garlic in some of the oil from the pesto until they go transparent.
    Flake in the Salmon and break it up with the onions and garlic.
    Add the dill and stir.
    Add the cooked pasta and the jar of pesto and mix well.
    Put in an ovenproof dish/lasagne dish and top with grated cheese.
    Bake in the oven for 20 mins at 200C or until the cheese bubbles and starts to crisp

    Lovely served with a bit of salad!

    I could make it better myself at home. All I need is a small aubergine...

    I moved to Liverpool for a better life.

    I've gone mad on salmon lately, so I'd love some ideas if anyone has any please? Or tuna?

    Tinned salmon is lovely made into fishcakes with a bit of mashed potatoes and some capers chopped into it.

    My Mum mixes tinned salmon with cheese sauce with bits of cooked brocolli, or any other green vegetable left around, in and mixes it with cooked spaghetti for a quick meal. If she's away in the caravan she uses a packet of Knorr's Soups of the World and mixes the salmon & pasta with that instead :D

    You could also do a tuna or salmon pasta bake. Cook pasta shapes of your choice, meanwhile gently fry together some veg - onion, peppers, courgettes maybe - then add salt & pepper, some garlic, mixed herbs, a tin of tomatoes or pasatta and the fish. Stir in the pasta, put into a pyrex dish, top with some grated cheese and grill until golden & bubbly. We had this for tea tonight with tuna it was lovely with a salad too. HTH
