It's a good one to make & freeze & bring out when you want to wow someone but don't have much time. Also a good one for Xmas buffets etc;).
Or how about fish pie made with tinned salmon? I have done this in the past & it works fine esp in little indvidual serving dishes, I use pureed sweetcorn instead of white sauce & always put sliced hardboiled eggs between the fish & the potato layers.

Found a tin of Salmon at work the other day, not something i'd normally buy.
Just wondering what i can do with it, a cheapish meal of some sort?
Or else i'll end up giving it to the cats :rolleyes:Errrr...come back later0 -
Fishcakes would make it go a bit further and use up leftover mash if you've got some...... can't beat homemade:wave:0

OR.. I have done a stir fry once with sweet baby orange peppers, onione, garlic, olive oil, flaked salmon and noodles!!! Twas delish!!! Nooooo, don't give it to the cats. make a lovely salmon quiche:D
Fry 2oz mushrooms and one small onion until soft. Drain the salmon (usually a 7 1/2 oz tin) and mash. Into a prepared pastry case spread the onions and mushrooms. Top with the salmon. Beat one egg with a quarter pint of milk and 2 oz cheese, then season with salt and pepper. Pour over the salmon, onions and mushrooms. Bake at gas 6 for 25-30 mins until firmly set. Eat hot or cold. Delicious:D
